He didn't want to let go of the one thing he thought he had control over. Simple sanitation and producing a quality product as he's walking on egg shells surrounded by killers who would off him in any second if the product doesn't meet their standards. At this point, Walt was Gus's prisoner.
It's funny how Walter couldn't let himself to work neither with Grey Matter, nor with Gus, even if both of these business would have bring wealth to him and his family. He just wanted to be the man at the core of everything and his ego destroyed all he worked hard for. This is some sort of a curious and funny irony, isn't it ?
Gilligan is working on a potential spin-off series, set in an alternate reality in which Walt and Skyler took Saul's advice and invested in the Laser Tag business. He's calling it ... tentatively ... "Lasing Tag." Basically the business becomes so successful that Walt is able to get out of the meth business completely, hires Jesse to run the operation, and they all live happily ever after. Well, until Walt dies of cancer, obviously.
