    Great experiment Jared! It sure looked good, but I'll take your word on the smell. I'm thinking if I ever do a dry aged brisket, I'm just going for 21 to 28 days, mainly just to maximize the beef flavor and not have as much weight loss. Enjoyed the video!

    Your video here is very informative and well done👊🏼 my brisket comes out and does have a bend and is very moist. Could be the cooking process you did yours. 225-250? For the whole cook?
    But like I said before.. probably was the bacteria inside from what was done with it and how it was handled.. gotta be careful! I’m pretty sure of it 👊🏼

    I am not brave enough to try this myself lol but hopefully next time, you'll work out the kinks and maybe not age the brisket as long? Cool experiment regardless and thanks for sharing!

    What temp did you pull it off at? And maybe do 30 day next time to compare. Glad you and Melissa are doing well.

      I cooked it at 250 on my gator pit and it was pulled at 203 and rested for 4 hours

    I've never seen this done before Jared this was absolutely fascinating and how awesome saving that beef fat for tallow! This was a great experiment but too bad about the funky smell, it did look great though!!! Can't wait to see more dry aging videos😃👍!!!

    Idk man. You definitely cooked that brisket wrong somewhere in the process. It looked hard and neither brisket looked remotely juicy. Sorry
