Universal sauce is amazing! I have used it for potato salad and macaroni salad. Also for so much more! I made a "tuna" noodle salad, a thousand island dressing for a TLT salad, a chipotle lime "mayo" for elote corn salad and a spicy mustard dip with it. I omit the oil and it's still very creamy and delicious. I have been making a batch of the universal sauce every week and then making small batches of the alternate flavors over the next 4-5 days. Thank you for this easy recipe made with things I almost always have on hand.

Made the dressing and the Cauliflower/Macaroni Salad. I used Banza Chickpea pasta (it’s what I had on hand). Family loved this. I really liked it because it’s so adaptable to what fresh or frozen veggies you have. Another WIN in this family! Can’t wait to try the BBQ Potato Salad 😋 Thanks!
great swap of cauliflower! being in india, these salads were a great hit in mid 2000s called 'russian salad', today i learned it's actually correct name and also called olivier salad
It's a blank canvas for sure. Depending on what I use if for, I'll add a bit or take away a bit. I've upped the nutritional yeast and garlic to make an Alfredo like sauce as well. Thanks so much for the comment!
Minus the bbq sauce, in my prior life of "before I was on my path vegetarianism/veganism" ...I made a similar potatoes salad. It consisted of roasted potatoes and and onions, mayo based salad dressing with dill, green beans, and cherry tomatoes. I served it with lemon dill poached cold salmon. It is very french...??? Again going to adapt. I'm not a fan of red peppers or green. So cherry tomatoes it is!!! THAT ALMOND SAUCE BASE IS GOING TO BE MY NEW BEST FRIEND!!! For me I can't get enough of your Asain dishes. I love curry... so anything with curry and coconut cream...❤❤❤Avocados. Also soup. Asian soups. ❤❤❤
I'm always trying to recreate the flavors of my childhood (and adulthood) with vegan ingredients. I eat a lot, so I've got lots of flavors and textures to chase. Also, it's ironic that I pretty much write recipes for a living since I'm the last person to actually follow one to the letter. Having folks make my recipes their own is the greatest compliment. Cold salads for dinner, were one of my moms favorite things in the summer. I so appreciate the pdf recipe cards you have linked. I have a 3 ring binder I keep recipes in, dated back to my great grandmas (not all vegan though😜 Except my grandma's dumplings 😍 I now use vegetable broth made from better than broth Vegetable base to cook them in and serve with "soft stir fried" tofu peas and carrots ) I now have a Munson Made this section!! I am slowly going through this book and adding a vegan version of my family recipes if possible. Thanks for all you do. BTW MAKING THE BEST TOFU EVER TONIGHT FOR LUNCHES THIS WEEK!!!!! The first time I made it my 15 year old son ate it as it was coming out of the pan. He says it is better than chicken. He told me he could live off it...LOL!!!

A former roommate of mine and I were both teachers, and we used to sublet apartments in different cities during our summer breaks. One summer we were in Chicago in a small apartment without any air conditioning. Coming from Vegas where it's a" dry heat", we didn't know how to deal with the humidity. Very early on in the trip we decided to just make cold salads for our meals, and it was the best decision we made. I've carried that with me over the years, and every summer I get into my cold salad mode. Since going vegan, I've been able to veganize those same salads with vegan mayo, but I wanted to make a dressing that gave me the same mayo experience, but with a better nutritional profile. This dressing checks all the boxes.

I've never heard of a Russian Salad... Googling... I think you could definitely use this sauce for that. And sub in cauliflower. Sounds delicious!

Any granulated sweetener that's a 1 to 1 for sugar should work.
