I usually just use cherry roma tomatoes, and if I want them dry, I pop them between the palms of my hand and use my thumb to press out the seeds and pulp where 90% of the moisture is. As for the leftover pulp, it can be used in veggie stock, pasta sauces or just tossed through a baby leaf salad with some lime juice and salt and pepper for a nice easy dressing.
