Have you made a Reuben, yet? A wonderful staple in the states. A Reuben sandwich is typically made with corned beef, Swiss cheese, sauerkraut, and Russian or 1000 Island dressing and served on marble or seedless rye bread. If you can't get the dressings , Russian dressing is easy to make. If you replace the sauerkraut with coleslaw, it becomes a Rachel. Pastrami is accepted as a substitute for corned beef.

When my daughter makes Philly Cheese Steak, she uses steak, onion, salt, pepper, mozzarella cheese, green pepper, and a little A-1, then she loads up the French or Italian bread, and finally puts it in the oven til the cheese melts.

  • @mkllove
    @mkllove ปีที่แล้ว +4

Onions are better browned 1st with salt and pepper ( they take much longer to brown ) then add meat later in with onions to lift fond in pan and keep meat more tender ( med rare ) Once meat is just slightly cooked, cover with cheese and bun on top to warm through.... You can also put a cover or lid on top of pan to seal in heat and steam and heat for just a minute or two to ensure cheese is melted. Having bun on top of melting cheese makes it easier to get it all out at once by tilting pan over without spatula and directly onto the plate...

Next time you toast the bread in this way, try spreading the bread first with a paste made from softened butter and shredded parmesan cheese, seasoned with a little garlic powder. It will brown easier, and it will add a nice crust of toasted cheese to the bread.

Red bell peppers are also a must! Add them in when you've got about 2-3 minutes left, they just give a nice crunch and extra flavor!

  • @joeldykman7591

5:00 just a quick tip, but the best way to dice an onion is to leave the root attached, halve it, then make horizontal then vertical cuts towards the root, and finally finishing the dice by making slices perpendicular to the root. You'll likely have some leftover, but the root helps keep the onion together longer. The way you prepped your onion would actually be better for slices.

As a New Yorker who has both a brother (plus his children) and a cousin living in Pennsylvania, I approve of the Philly Cheese Steak sandwich. 😉👍
Admittedly, I usually personally make ones with a mix of bell pepper (all colors if possible but red and green at minimum) and red onions if possible (I'm not a huge fan of onions and prefer the milder red ones but they're way too expensive sometimes compared to white/yellow onions) plus a mix of provolone and mozzarella cheese. Generally I cook the onion and peppers first, remove them from the pan to cook the steak then mix the peppers and onions into the steak once it's done and melt the cheese on top. Also, sometimes I'm tricky and simply make my sandwich on garlic bread (because I love garlic but I'm not a huge fan of mayonnaise) with the minimum amount of mayo spread on it. Heck, if I'm feeling lazy I use precooked steak that I can get in cans that is usually used for making quick fajitas, lol. 😅
Basically, the beauty of making food at home is that you can make it to YOUR specific tastes and substituting things usually easy. 😁

As a Philadelphian I applaud your version. There’s really no “wrong” way to do it. My wife likes “wiz wit” (meaning cheese wiz and onions) and I like “Prove pizza wit” (provolone, onion, and tomato sauce). The “wit and witout” is just a way of saying yes or no to onions. To me, peppers are a condiment. But if I go much further I’ll probably get someone disagreeing with ketchup. To each his/her/their own.
Pro tip: Put the roll on top of it and just scoop the whole thing.

Two things you should try; Italian beef sandwich (Pittsburg, PA) & if you like corn- corn fritters. If you don't havevfresh you can use frozen corn. Cut kernels off of the cobs ( 3vears) then blend till you have liquid mush. Mix in 1 small egg to act as a binding agent. Pour 2 tablespoons of mixture on a med-hot griddle(with some oil) about 7 cm in diameter. Cook until lightly browned (flip only once). Serve with butterb sprinkle with salt & pepper.
Best eaten as the come off the griddle within a minute or two. Then make some more. Enjoy.

Most folks in the USA probably get their Philly cheese steak sandwiches at restraunts rather than make them at home. So you get extra props for this one. One of the most important parts of a Philly Cheesesteak is the roll. The roll can really make or break your cheesesteak. If you have a nice fresh soft roll it just elevates the cheesesteak. Also, for me.. I'm not a big fan of the orange cheese-like substance that most places use on their Philly Cheesesteak. I realize that "Whiz" is now considered the authentic, but the reality is the original Philly Cheesesteaks had Provolone cheese on them. The "Fast Food" Cheesesteak places like Geno's and Pat's, switched it to that Gee Whiz stuff . I like to put "Cooper Sharp" cheese on mine. Not sure how available Cooper Sharp is to other areas.
and it is perfectly fine to put catsup or even steak sauce on your cheesesteak, don't listen to the nay sayers

all in all Recky, you’re a pretty tidy cook. You might get close to creamed corn using whole kernal frozen corn or canned with some what we’d call heavy or whipping cream maybe double cream in Europe, about 30% butterfat, mash up part of the corn or immersion blender part of the corn, leave the rest whole add your cream cook low heat until you get what look like a thick sauce or thin cooked US pudding (NOT european pudding)

There are so many ways to have these cheesesteaks My favorite was with white American cheese, fried onions and sliced mushrooms. I loved a pepperoni 'pizza' steak with added tomato sauce, mozzarella(and fried onions). Another I really liked was a 'steak hoagie' no cheese, but mayo on the roll, fresh lettuce and tomato(and fried onions). I've never tried with garlic mayo, but it sounds good. While I've eaten many a cheese and mayo sandwich, I don't feel both together are necessary on a steak sandwich(with fried onions). But that was quite an impressive cheeseteak i would love -and I'm from Philly. Wow. I'm on keto as well.

If you are ever able to get a true Philly cheese steak sandwich from an authentic restaurant, you will be blown away! I've seen them being made on diners drive ins and dives with Guy Fieri.
The only place I've ever had one is at the local state fair in the fall. They are fantastic, but they come out of a food truck. Still pretty good though.

Green bell peppers are an addittional topping if you so choose. But like others have said, you'll want to saute the onions and peppers first, and then add to the meat later. Also a good Au Jus (pronkunced Oh Zhoo) sauce is good on Philly Cheese Steak, imo. Because i tend to believe that they're a bit dry.

Every cheese steak in Philly I've eaten had plenty of grease from the meat and onions that each bite oozed oil....

For the little sweetness you were craving, you can add caramelized onions (it's commonly put on a Philly). For a variation, you can add Cheez Whiz (not sure if you can get it or anyone has sent it to you). Also, sauted green pepper is quite often put on a Philly as well and sometimes sauted mushrooms. Depends where you get it. My favorite is how you have it with caramelized onions. :)

Next time, use the mayonnaise to fry the bread. Spread the mayonnaise, then put it face down in the skillet. Mayonnaise is mostly oil so it will fry quickly and prevent juices from making the bread soggy

Best Philly Cheese-steak I ever had was a basic long roll with about 8 slices of steak cut at about 1/16 of an inch each, with sauteed onions and melted American cheese. No sauce or garlic (that I know of). I haven't had a good cheese-steak in over 10 years, maybe even 15 years. Either way, there are many different modifications that can be made from the original recipe. It's just a great, classic combination of flavors.😉

Interesting...had a Philly cheese steak for lunch today. I had sautéed mushrooms added, but this sandwich has so many variations.
Onions and bell peppers have been mentioned, but adding pepperoni with Italian seasoning is a favorite, or using Cheez Whiz, or dipping the whole sandwich in au jus broth is another way.
I even made a korean variation using kimchi.

Just think of Philly Cheesesteak as one kind of steak and cheese sandwich. Certainly there was an original recipe with certain ingredients but it's been twisted up over the years too many times to count. I personally am from Texas and prefer it with tenderized cube steak (it's inexpensive and not too chewy but definitely has more texture than rib eye) and use pepper jack cheese which is Monterrey Jack cheese with jalapeno pepper in it. I sometimes also add sauteed onion and/or green pepper or mushroom and it's amazing! I wouldn't worry too much about sticking absolutely to any recipe since most ingredients have some type of reasonable substitution. And who knows! Maybe twisting it up the "Swedish way" will create the next big thing, lol. Looking forward to seeing more of this content on your channel. Even if it's not a cooking show, lol.

The key to a cheesesteak is to mix the cheese in with the meat evenly, not just leave it on top. This ensures that every bite is the same. It's like when you're adding butter to popcorn. Gotta mix it all together!
Once the cheese is melted top, just mix it all together and chop it up.

Love your videos. If I may suggest an idea for a new cooking attempt. Pepperoni Rolls are from my home state of West Virginia. They are pepperoni and provolone cheese wrapped in a yeasted bread dough and baked. You have access to provolone cheese and the only other filling for the roll is pepperoni or some spicy sausage like pepperoni. The final ingredient is the yeasted bread dough to wrap the fillings in before baking. They are super delicious on their own or with a marinara dipping sauce. Ty for the amazing content!

I am not at all an expert in Philly Cheesesteaks but I will say that flank steak is a lot tougher than rib eye so I don't know about that substitution. I actually like flank steak a lot but I always marinate it to tenderize overnight before cooking and that shouldn't be required with rib eye. It's not a part of the cheesesteak thing, but just for doing a flank steak as a separate issue, in the US you can use bottled Italian Dressing (available in any supermarket here) as the marinade if you don't have your own favorite mixture. It just needs to contain some acid (vinegar, lemon juice or whatever).
