When you do start dating someone serious you put them in your "serious relationship compartment" and you fall into to the old habits and call them by the name of the last person you were in a serious relationship with. Its not because you are thinking about the old partner it is because you are giving the new partner your space in your "serious relationship compartment" and out of habit you say the old name

Afterwards, I told her I was sorry, and she said ,actually that didn't bother me, It only bothered me that you corrected yourself in front of the waiter!

There are times when we say to that person "I love you" or we call out there name during sex. And this happens so much during the serious relationship it becomes almost like a habit to say their name because their name is said so much during the serious relationship. But then you break up.
I agree with her, cheating my ex a lot of time, then called Her the women I slept her name, the only time you can not hide anything during the sex. By experince:)
