Basic recipe works just fine!...time, temp, etc. Made mine with 3 layers rigatoni, tomato sauce, leftover Vincenzo bolognese, fresh mozzarella, shaved Romano & Asiago. Topped with sauce, panko, pepper, shredded parm. Slight crunch on top...softer underneath. Perfect!

In Chicago we used to have this a lot when I was a kid, but we called the dish mostaccioli and usually we'd add ground pork or beef. Sometimes people would put ricotta but always we would use mozzarella and parmesan. I think a lot of our Italian-American population is mostly from the south of Italy, especially Sicily. When people make pizzas at home, you often see the square or granny style pizzas, in the big rectangular pans. They often call these pizzas Sicilian pizza too.
It's fascinating to hear about the variations and influences in Italian-American cuisine, especially in Chicago. I appreciate your insights on mostaccioli and the Sicilian-style pizzas. I'll definitely consider showcasing those dishes in future videos. 🍕🇮🇹

I used regular mozzarella. but flavor is very mild so I decided to use Pecorino Romano instead of Parmesan for that little extra saltiness!Bravo! Prego!
I'm from Sicily and I've never eaten or cooked pasta al forno with meatballs and ricotta. The pasta al forno that I know is made with ragù and bechamel, often with eggs and peas too... Always rigatoni! A mix of all the variations :) Didn't even know that traditionally it is made with ricotta and anellini, never seen it made that way! I like ricotta only inside cannoli and raviole :p
Chef Vincenzo, What do you think of adding a light dusting of Italian bread crumbs on top of the ziti before you put in the oven, to make the top even crunchier? Is this ziti heresy?

Something I do is mixing all the ingredients together before assembling, I’ll definitely try it this way though, in Foggia province we also use eggs but only ham and salami.

All these dishes are so similar to the ones i make for my famigghia. Of course in this case make aniletti ô furnu with rrau sicilianu with piseddi. Of course u need the muddica (bread crumbs) and picurinu sicilianu. Still with the eggs and i like to use calabrese hot peppers in oil. Lots of nero d’avola to accompany! Â saluti Vincenzo! 🍻🍻

All these dishes are so similar to the ones i make for my famigghia. Of course in this case make aniletti ô furnu with rrau sicilianu with piseddi. Of course u need the muddica (bread crumbs) and picurinu sicilianu. Still with the eggs and i like to use calabrese hot peppers in oil. Lots of nero d’avola to accompany! Â saluti Vincenzo! 🍻🍻
