I usually press their good players, not their bad players. I'd rather give the cb with no passing ability a lot of time on the ball than their fullback with high passing and vision. Though I almost always use this instruction on their defenders rather than attackers to avoid creating space behind my own cb's.
It will depend on how you like to play, pressing the bad players (particularly defenders) gives you the chance for winning the ball back up high, what you're saying can certainly work in shutting down a creative player, but if they are smarter than the presser I often find they beat the press leaving me short, all depends on the personnel you possess compared to the opponents
I always click on the assistant but if a player has poor composure I mark them unless they have good off the ball, trigger a press with one center back and show the other onto their weak foot as well as trigger press and show on to weak foot full backs. Always tackle hard tired or players not brave and players on the wing and up front depends on the team and players. And center mid playmaker regardless of how their status they're the trigger press for midfield and their partner is dependent on their role. My players I set the wingers to mark the full backs and take off tackle harder from individual institutions now on wide areas (my full backs and wingers) so they stay on their feet as I seen in my data hub the tackling in that area my tackling is poor n finding better tackling. And center backs I let them do their thing unless it's a target man that doesn't drop in deeper with overlapping runs through the middle. And unless the center attacking mid is comfortable on the wings I never mark them as it would draw out my defensive mid I also just let them to their thing. Basically always a trigger press on the full backs, one center defender and one center mid

@VictorAroke that's so bad because im giving these guys playtime too so the can show off in matches !!! And they also are above average players . Some of them quite good too !! There is one forward that's looks the best one in skills but got only 2 starts for no reason
