My guess is that he is shooting in RAW and converting to BW in LR or whatever. I don't think any photographer would want to lose the colour information, just in case he/she wants to print/publish something in colour. You never know!
To my knowledge and assumption, Nat Geo photographer is a more documentary type depicting raw moments without much post processing. Also a Nat Geo photographer is bound by assignment deadline, rules etc. However, a fine art photographer is on his own mostly. He can frame his own story, can post process to his liking, and has more room in expressing his own thoughts.
