You can make these without tapioca flour. Equal amounts of chickpea flour and water. Add spices. Or poppy seeds and honey. Or cinnamon. Or whatever... These are now my replacement for bread, along with home-made lentil bread. No more wheat bread for me.

So glad you like them! I recommend stacking them on a plate and putting some wax paper between the wraps, so they don't stick together. You can store them in the fridge for up to 3 days, wrapped in plastic wrap. The tortillas dry out a bit in the fridge, but you can reheat them individually in a pan (on both sides over a low/medium heat for about 30 seconds) until soft and elastic/pliable again. It's also possible to freeze them for up to 3 months!

Hi thanks for the video. After mixing the ingredients using your measurements I found the mixture too thick. In the video the texture was runny. So I had to more water to achieve that texture. More than a cup.

Just made them. Not so easy to cook in the pan. I found I had to cool the pan first before adding a new scoop or it solidifies too quickly before I can even spread it out. They're a sort of hybrid between a pancake and a tortilla. Not quite as al dente as wheat but more flavourful, not to mention 10x more nutritious. Ill be making them again. I think a touch of sweetness is needed. I just need to get my technique down.

I am shocked to see gluten free so-called Mexican style tortillas made of artificial ingredientes, preservatives, antioxidants, rubber xantan, etc.. while the healthy natural answer is so easy and immediate: corn tortillas !!!! The traditional Mexican tortillas !!!

You would need to experiment. Buckwheat or quinoa might work, but I haven't tried it.
