- Eric is back in the Victory Kitchen! And this time he's not messing around- he is armed with SPAM! For as much flak as SPAM gets sometimes, without it, WWII could have gone a little differently. So to celebrate this glorious meat concoction, Eric will be doing a series of recipes on SPAM, all while giving you some little historical nuggets about the wonder meat. This week- an upside-down SPAM pie!
*This video is a little quiet, so don't be afraid to turn up the volume!
SPAM upside-down pie recipe:
Line an 8-inch mold with SPAM slices and fill with baking powder biscuit dough (prepared or home-mixed), well-laced with tiny cubes of SPAM. Bake 40-45 minutes at 425 degrees F. Turn it out on a platter, fill center with a tart cheese sauce (as one made with tomato or horseradish) and watch the family turn out and fill the table in a hurry!

I watched a video of forgotten vintage recipes. This was one of them. As I was searching for more information I found your video.
I remember eating spam from the 1960s when I was a child and it was always fried slices. It was OK. I understand now why Spam was part of some meals back then. It was a budget thing. Cheap meat that works. Back then the can did not have a pull ring for removing the top. It came with a windup key. You fit a foil tab of the lid through it and wind it open. I've never seen Upside-Down Spam Pie before today. I'm certainly not going to make one. But I would try it. Should I come across it being served.
Awesome! Thanks! Do you need to spray the mold with something before the first layer of SPAM?
