      You gorrit Juliet! Cooking is like second nature to most of us, we just learnt the procedures without asking questions. But the tons of questions I get from non-Nigerians and Nigerians who did not start doing this from a young age have made me understand that the WHY is the most important aspect of cooking. This has a great influence in the way I make my videos and the information I include. Thank you very much. :)

    Thank you ma. I live in Sweden and actually cook my stew like this but I wanted to see your method😊. One tip though: I grill the fresh paprika or airfry them with onions before blending. That way you can put plenty in the blender once and blend because it will be soft and the flavour is enhanced

      I also just buy organic smoked peppers in a jar from Costco and it is so cost efficient, because it has like 20 peppers in it for $6.99. If I was buying fresh peppers, it is 6 peppers for $6.99

    Wow. Thank you flow for the shout out. I enjoyed watching the video. We have similar styles of making tomatoes stew. The only thing I don't do is broiling/grilling the meat in the oven.       Yes o, that golden look of grilled meat works well with the red colour of the stew, much more appetizing than the white ungrilled chicken or dull ungrilled beef.

      No, I did not use the sweet peppers, I listed it as alternative for those who can't use tomato paste. I really do not like adding lots of fresh peppers to my stew because it makes the stew weaker when it comes out of the freezer. But tomato paste? Never fails; it pops the stew more and stands firm after freezing.

    I used tin tomatoes before to give it reddish colour but now I don't use tin again but only fresh tomatoes and fry it very well till when it stop jumping up and down with that I the tomatoes is well fried .
    Even the stew are eating now my husband thought I use added tin tomatoes pest but no ...One secret about stew is don't allow it burnt with the outcome make attractive

      NKlove I'm glad that you are able to achieve what you want with just fresh tomatoes. But my expectations of a popping red tomato stew is sky high o. That over-ripe tomato that will give me a popping red colour that meets my specifications has not yet been cultivated. 🤣🤣 Even the most GMOed tomatoes do not give me that.

      If you start frying both at the same time, it is either it burns or more frantic stirring for you.

    GREAT video! Seriously, fantastic! I understood this, didn't feel overwhelmed, and will cook it tonight! I'm wondering, after you added the water to the tomato paste it seemed to develop the consistency of out-of-the-jar pasta sauce.... so could pasta sauce be used as an alternative to tomato paste instead of blending tatashe?

    Is there a reason why stew would still be tasting tangy even though the stew has been fried well? What causes the sour taste? I used only Roma tomatoes and scotch bonnet peppers as the base for the tomato paste as I do not have access to tobasco/tatashe/romano pepper

    My mom passed away last September and she used to say the tomato should like wet sand or granulated which is when most of the moisture and the rawness is fried out. 🙂

    Nice one there Ma Flo, what if the tomato puree and paste were added at the same time? Will it give the same result?

      Tomato puree requires more frying time than tomato paste. I wouldn't start frying them at the same time but that's just me and my science of cooking. No need to add it at the same time for it to be causing early burning.
      You can fry them at the same time, the worst that could happen is that you will need to stir more often.

    wow thanks for the video,i usually fry the tomato paste before adding the purée,is it a wrong method?

      I wouldn't do it that way because the puree needs more frying than the paste that's why I start with the puree then add the paste later.
      Adding paste first would be like cooking fresh fish first and adding beef later. Beef needs more cooking time so should be cooked first till almost done before adding fresh fish.

      I don't like red bell peppers in tomato stews because of its texture. So I would say no. But you can try it and see if you like the texture.

      I buy where I live but recently, they stopped selling good palm oil. There's this coloured liquid they now sell as palm oil here. It's not palm oil so I've put a hold on buying palm oil till they start bringing the real thing again. When I go to a neighbouring city, I will buy palm oil from there.

      Shachie I don't live in Italy but from a quick google search, I saw that passata is sieved, watery and too smooth, almost like ketchup. I showed in the following video >> th-cam.com/video/ccjOaLGqiX8/w-d-xo.html at time 01:25. If that is passata then it is not the same as the one I used in this video. The watery tomato puree is labelled as tomate tamizado in Spain. It does not make a nice tomato stew, because it does not have "body". I wouldn't use that to prepare an appetizing Nigerian stew.

    Great, will definitely try this (again) in the future. Having watched quite a bit of your videos, I´ve come to the conclusion that the single most important piece of equipment one would need in order to cook African food in a timely fashion is: The pressure cooker. In 20 minutes time, you can cook that amount of assorted meats for 3-4 persons that it´d take at least an hour to do without one. So I will definitely have to get me a pressure cooker in the near future, because when I get that, I´ll be able to eat African food (which is my favorite kind of food) a lot more often than what I currently do.
    I´m going back home to Namibia for christmas though, we are going to eat a lot of chicken & goat cooked the traditional way (in a large pot over fire) , it´s hard to put my excitement in words, ahahahaha 🤣🤣🤣🤣🤣🤣🤣🤣

      Juliet thank you. Issawig! I no longer have the patience nor the time to sit down and count my hair strands these days all in the name of braiding. 🤣🤣🤣
      When I did, I would still have taken it down by now because it's been more than two months we came back from Nigeria.
