homemade lemon meringue pie recipe | dessert recipes | lemon recipes | meringue recipes

  • this lemon meringue is moreish half the price twice as much. your family will rave about this one. serves 12 slices. recipe written below
    2 x 160g large flan bases
    med saucepan
    3/4 cup caster sugar
    1/2 cup corn flour
    whisk in
    1/2 cup lemon juice with
    300ml or 1 and 1/4 cups water
    bring to boil thicken remove from heat and add
    2 tea sp grated lemon rind
    80g chopped butter
    3 egg yolks
    allow to cool 10 mins
    spoon on to bases level then rough up fridge 1 hour
    pre heat oven 220 degrees c
    med bowl
    3 egg whites beat high speed then add
    1/2 cup caster sugar a little at a time on low speed then extra 10 seconds after all sugar is in
    spread half on each pie gently move around edges then make peaks all over
    bake 3 minutes
    cool on rack or stix for 10 mins
    eat at room temp or fridge til cold
    cover with a bowl will last 3 days in fridge

    Hi sweet I made this recipe and they are both gone I didn't get to try it. My 7 year.old grandson told his mother its ok mum grandad will make more. I did taste the filling(licked the spoon)BLOODY easy and quick so THANKYOU. Xx

    Thanks for the couple of tips I never knew to put the hot pies in the fridge for an hour and the bowl over them, leaving them
    in the fridge, I put cling wrap over them and they all ways stick to the meringue. thanks again enjoyed your you tube segment.

      your so welcome glitter but. make sure the pies are cold before you put them in the fridge. because there only in the oven for 3 mins. the filling still stays cold thats why it only takes 10 mins to cool down. its important to keep them off the bench when they come out. have a great day mate :)

    Looks so yummy!!....if you want even a quicker way use custard powered (follow cooking instructions) then had lemon juice n zest

    was and still is my favorite dish from mum , she would always have to make extras as other people would like one as well as when i had one i would rave on to everyone else how good they were . i still miss her so much even at my age , so many things i never sat down and talked about as i always thought there would be more time.

    man, haven't made or seen a lemon meringue pie in decades. Good stuff. Mum taught me to make it just like you, though i often had seperation issues after a day where it would get watery at the bottom. You didn't though. I might try it again when winter rolls around in December and our lemons are ripe! thanks

      theres a few reasons that can happen. if you over beat the egg whites. if it is muggy. if its left out the fridge too long. if its put in fridge before its completley cooled and if you wrap it in glad wrap. all these things will make it seperate. have a great night Cameron :)
