"What he meant to say was..." lol Chef, I love the recipe for two reasons. This is perfect for leftover spaghetti squash and a nice change from the standard beef & barley soup. The best recipes always allow you to customize to your preferences and what is locally available. I want to make this with the addition of leeks, squash, and finely diced courgettes.

I made your mushroom, spinach, barley risotto over the weekend, omitting the squash and zucchini. I served in a bowl and topped it with some sautéed scallops. It was simple, easy, creamy, and DELICIOUS! Thank you for the recipe, Chef JP.
