    I tried this technique out over the last weekend when my parents came to visit. my family has a old salmon recipe that just I had to add this to. I took a big yellow zucchini and cut it into a net. After i would quarter the net so it was about 8-10 inches in length and 3-4 inches in width and salt it. Then put it in a hot fry pan with a little butter and veg oil to give it a nice warmth a bit of browning. I would wrap the net around a finished piece of the salmon to serve on the plate. It was a great garnish to add a bit more salty flavor to the salmon. Next time I make this I'm going to take some pictures and put them on one of the food Reddits.

    I pictured it being used to decorate a beautiful seafood platter with crab legs, lobster, clams etc. It looks like a fishing net and how beautiful to have those vibrant crustaceans mixed amongst the bright white of the Daikon. 🐚

    I've got some pretty serious knife skills, and I've been in food for a long time - and this is the first time I've seen this. Thank you. Maybe I don't have much imagination but I would like a garnish like that for the 'catch of the day' special. Literally drape a whole fish (cleaned, gills and fin tips removed, seasoned and grilled) with a net to present the 'catch of the day'.

      I have rarely seen this in the states. A lot of foreign high class restaurants serve this type of garnish, and at many parties as well. A Chef cut a potato once like this to show me, he was from india. He made it into a type of french fry and served fried fish with it and a curry drizzle.

    Wow. Whoa. I think the chef part of my brain just exploded. Some of these garnish videos look almost impossible, but you clearly delineate the steps. I can see it will take a lot of skill, technique, and practice, and the proper knife and ingredients, and I'm thinking a round plate for the display, but with a little patience I think I can get there.
    There are some great suggestions by other viewers on plating and pairing this as well, which I'd like to see you and others include examples of in video form, but with imagination there are many applications. This one is among my favorite videos, and I've liked and subscribed of course to the channel.
    The idea of using the daikon 'net' with fish seems to be a common one and excellent, and as I added to another comment, to really carry the idea further, we could think about including a variety of sashimi fish and seafood, carved or inserted/placed in the 'net' in the shape of the fish or seafood they represent and come from, for salmon, insert the 'eyes' using large salmon roe eggs, and sticking through the net include a few pieces of properly rehydrated soaked seaweed like dulse, kombu, laver, dry nori, or whatever else you have available like beefsteak leaves, green onion strips/slivers, carrot, radish, and other garnishes, there are so many options.
    It will look like it was just hauled out of the sea once you tie up the 'net' on the plate at the top, and when opened from the top, the ingredients will lay down in a nontraditional but nice assortment. Perhaps too busy or too many ideas, but this will be fun to experiment with.

    I'd use this in a presentation of grilled salmon or tuna. Use a serving dish that's a darker color (ideally blue), spread the net out on it, then top with the fish. Maybe get into a little bento-style garnishing - say, a scoop of hummus with starfish cut out of nori to represent beach sand, etc. Get visually creative.

    • @MakeSushi1
      @MakeSushi1  9 ปีที่แล้ว +1

      I think you would still need string to hold it together the roast and to hold the net on the roast, but that would be a very interesting thing to try, maybe it could be done with potato or carrot making a very unique exterior pattern. runkurgan
