9:17 I totally get it. I never had to put stuff on my white rice but it wasn't anything special to me. then my gf from Cambodia would make rice every morning. After a couple years of that i wouldn't really miss it when she was gone but when she came back I loved waking up to the smell of rice in the rice cooker and hot fresh rice with whatever we ate in the morning.
Really cool video and history, John! The music was a bit too loud and was distracting when you were explaining the meal, but you did a great job of describing the characteristics of the food, which is hard to do well.

My daughter and I ate at a Buddhist restaurant by the bamboo forest in Kyoto. I was not sure what everything was but it was very good. I spoke with another woman who also went to Japan but she said she only ate at McDonalds and those types of restaurants. That is sad.
John, have you seen the drama “Shogun“? My high school was a Buddhist school, so we stayed overnight at Zojoji Temple and experienced training and ate shojin ryori (traditional Buddhist cuisine).

If I ever get to travel to Japan, I'll probably have a problem with half of the food out there. Fishes are not a (major) problem, but shrimps...I fear those things ever since my uncle 'showed' them to me when I was 6 yo. And any kind of beans equals another trauma from kindergarten xD This video is basically telling me, how much I would miss out, only because of bad memories, or not being accustomed to the flavors and texture. Especially texture.

Oh, that would be … quite interesting, but alas, much was destroyed in the countless earthquakes, fires and wars in this part of Japan. Not much that’s ancient exists without having been rebuilt. But still, it’s amazing that the menu and the recipe was found! Quite a footnote in food history.

iirc the shogun, or maybe it's the emperor, who would eat a different food every meal or something.
Shogun often lived / ate simple because it was safer - they had many enemies I bet!
