  • Here I am rolling out some puff, ready for further processing. We use the Scottish method, where the fat is mixed with the dough. Then the pastry is rolled out 3 times, a half turn and 2 book turns. Giving 7 folds in our light puff pastry. The layers make the pastry crisp. As used in our sausage rolls, apple turnovers and many more products. We make everything here at the cookie jar ourselves, combining traditional skills and quality ingredients.

    He is good at trimming the end and repackaging to keep ends built and straight. It is like a puzzle.

    nice! Whath kind of equipment are you using( Brand on your dough sheeter) is a good machine ? Im looking for a good dough sheeter .

      Sottoriva is a good company that makes good sheeters. I have TeknoStamap at the moment but the bad thing is, is if you want to change the sheets you have to undo the 3/4 of the machine. Prefer a machine that has a beg diameter of the central cylinder.

      You've never made puff then. If you have you'd know that if you keep it square and equal it comes out the same way. Otherwise there's a long tail at the end wasted.
