Why go to the trouble of milling your own grain for health purposes if you’re just going to sift the health benefits out of it? Freshly milled flour is the best flour for you. Lots of recipes out there for a light and soft sandwich bread using only freshly milled flour.
I don't sift my flour at all. I just let my dough sit for about 30 minutes to absorb water to soften the bran and germ. My bread always comes out soft and fluffy.

You can add some of that bran back into your sifted flour in any ratio if you don't want 100% whole wheat. Like 50/50 or 60/40 etc. I like it

You can still use the bran that you sift out in another recipe so you are still consuming it. Eric puts it into smoothies.

True, I have never sifted my freshly milled flour, and I have never had a dense loaf I always get a light, fluffy, and soft loaf of bread.
Eat your own garbage bread, and stop being a Karen.
Because some family members will not eat it with bran in it, that is why.
