  • 5 ways we cut living expenses this month:
    1. Opened new WiFi account, got a better deal, changed to the basic plan. Went from $140 to $35 a month
    2. Changed auto insurance company from GEICO to Progressive, combined our auto insurance and paid it off using a credit card. Our payments went from $480 a month to $340.
    3. Put a pause on eating out. Saves us $200 - $500 a month. Cooking all meals at home, bringing snacks, sandwiches and drinks when we go out. Doing groceries at places like ALDIs and Walmart or going to farmers markets and getting food that’s about to spoil for a discount. Buying more whole foods and less boxed and packaged items.
    4. Spending more time at home instead of going out with the kids especially on weekends. Saves us $200 - $400 a month between gas, activity prices, and food. Going to playgrounds and free events. Spending Sunday morning at church, they give free coffee! As well as snacks and drinks for the kids in childcare while you get some kid free time.
    5. Utilizing local food pantries. Get 2-3 days worth of free food.
    Vegetable chicken lentil soup:
    STEP 1
    Sautee veggies and spices for about 10 minutes on medium heat.
    Oil, butter or water for sautéing
    2 chopped onions
    4 gloves of garlic
    2 chopped carrots
    2 diced yellow squash
    1 tsp cumin
    1 tsp black pepper
    2 tsp salt
    1 tsp turmeric powder
    1/2 tsp ginger powder
    STEP 2
    Add lentils and water or broth, bring to a boil and cook for about 30 minutes until lentils are softened.
    1 cup lentils
    Enough water or broth to cover everything and then some !
    STEP 3
    Add meat of your choice or keep it vegan! Add 4-5 potatoes peeled and cut into 4s. Let that boil for another 25 minutes. You may need to add more water. Everything should be perfectly covered.
    Add 1 bunch of chopped cilantro towards the end.
    Tastes good served with rice and a squeeze of lime.
