Why not any fat can be your softener for a soft bread can use olive or milk If you don’t want to use fat at all then like a normal sourdough bread you can. Make the recipe with higher hydration like 65 or 70% and use pan to bake it of course you will achieve sandwich loaf but with less soft texture which is ok to me ✌🏼 but note that higher hydration maybe it’s difficult to knead maybe you knead to do some folds
Just wondering why you did everything in grams except the water? I had to try and find something that measured ml. Got it ready though and hope it taste great.

Just go for grams it’s it’s about the same 100ml water about the same as 100G ✌🏼
