Here's the deal with videos like this. None of these chef's ever say the heat setting on the stove. I hear that it should be at high heat for searing. I also hear medium-high. I am guessing that thicker pieces should be cooked a little longer. THat looks great, but it doesn't leave me sure of myself on trying it in my kitchen. CHEFS: Treat every video like nobody as ever cooked before in their life. An extra few seconds to explain details thoroughly is very helpful.

I just got back from a red hot YellowFin Tuna bite out of San Diego. I came home with more Ahi than I thought I knew what to do with. This looks simple and fantastic.....Thnx for sharing, i will definitely using it
+schatgunify you could also try to make it in ceviche form. I have a ceviche video on my channel, you just substitute the shrimp with any seafood you would like. Thats a good problem to have...more ahi than you thought. Thanks!

I know you used sesame oil to sear the tuna. OH and you had some mayonaisse, with the ponzu and some olive oil. Is that right? not to mention the black and white sesame seeds.

Ponzu and sesame oil are my favorite asian sauces. Currently marinating my tuna steak in cooking sake with a little ponzu and korean bbq seasoning right now.
What are the increments? How much Ponzu sauce, sesame oil and wasabi paste do you mix in together. Ratios are important, don't want too much of each, we we need to know the measurements if we want to cook this so that it tastes good. Same with the mayo sauce. No increments.

Wow, amazing! I just made peppercorn encrusted tuna but it didn't turn out too good. I think I need a higher quality tuna to use, not the frozen generic store Tunas.
Find a local fish monger, my friend opened up a place and they get a full yellowfin every week! They invited me into the back to cut it up once and I got to choose my piece of Senaka (middle, top of fish - high quality Akami - lean) and Haranaka (middle belly of fish - high quality Chu-Toro - fatty) Find a place like that and you literally can’t frigg this dish up! Let the fresh ingredients carry it!

+shilpa chadha glad you enjoy to cook with music as well! its therapeutic. the tuna can be cooked by preference to your taste. I like mine like sashimi or sushi so i just lightly sear the edges. Enjoy!

hola! you can make with equal parts soy sauce and lime - and when you make it, you can make it to your liking. I tend to like it less soy and more citrus so I will add more lime. hope this helps!

Most sushi is frozen to kill parasites. Get an unfrozen chunk of fish and you might end up with a new friend living in your gut!
