    Looks great!! When I met my husband 25 yrs ago I was so thankful he loves to cook! His dad was a butcher and he cooked for himself at a very young age! I was pretty much a vegetarian but that didn't last long lol

    Josh - I would recommend NOT putting honey on top during the first 5-6 hours. That will ensure maximum smoke penetration, which you mentioned faulting in your video. Save the honey for when you foil wrap it. You could also try 180 overnight, on the weekend, starting at midnight. When you wake up, turn up the temp, and do your thing. Let the whole thing rest in a cooler for a couple hours. Come dinner, ready to pull and serve.

      What about start at 190 degrees starting at Midnight then wrap it after 8 hours then turn it up to 250 and finish

    New to Traeger but not new to wrapping… with my offset I would smoke after the wrap with some rub seasoning on top, never had bark issues!

    I inject all my roasts, seems to help break down that muscle. I didn't know traeger made a disposable drip tin, I just use the extra wide Reynolds wrap.

    I made a pork butt on Friday as well. I put some on Hawaiian rolls, my mom is Hawaiian, with honey BarBQ sauce and pineapples. Trust me, it rocks. You ever in Texas I’ll make you some.

    I have the Masterbilt electric smoker and I wondered if the wood pellets you use can use used in my smoker? We had a smoked pork butt a couple of weeks ago at a b'day party and it was great. Your recipe looks excellent and I will be testing it out. Thank you for sharing.

    #FunFact The pork butt is the front shoulder of a hog.
    Back in the colonial days New England butchers took "less prized cuts of pork," packed them into barrels, and shipped them off to other places. "The barrels the pork went into were called butts," and the name stuck.

    Awesome job sir. Butts are typically fat enough you can braise them in their own rendered goodness. Cube 7-10lbs into a dutch oven, add onion, garlic, and a couple orange slices in addition to s&p, smoked paprika, cumin, ancho chili poweder mix and toss in the oven 3-4 hours. Pull everything apart, toss in homemade bbq sauce, or sauce of your choosing and bingo. Delicious, but never a substitute for a good ole smoked butt. Can't wait until I own a smoker.

    Josh! You got kinda lucky lol. One time I tried doing the same thing almost identically. I hit what’s called a meat stall I believe? Basically I hit around 150 degrees or close to it and it got stuck there for hourssssss. I had to kick the temp up as well to cook through it. Never heard of it prior. Great vid as always josh I’m a AF guy as well!

    It looks good. Most people cook it further so it’s completely falling apart like pulled pork. I like to keep things with a little bit a bite and it’s still so you have some texture instead of just mush.
    If you want more smoke, put your honey on much later give it the first four hours or so with no honey on it, anything with sugar in it is going to seal the meat to prevent the smoke from getting in. Also I know they call it rub but when you actually rub it in your close up the pores on the meat and that will prevent smoke from getting in there also. So if you just going to get your rub on there and let it sit is best or just pat it on, but when you actually rub it in your closing up the pores of the meat and making the surface a little more dense and that prevents the penetration.

    Looks good Josh, I have smoked many pork butts in my days. I have found that an internal temp of 202 to 204 is where I prefer. Pull apart tender. Good job!

    An offset smoker is what you need if you want that deep smoke ring.

    Should cook it to at least 203-205 so all that connective tissue renders out. Then you can pull it with a couple forks, it'll fall apart.

    I find it is really hard to concentrate on the work when a good pork shoulder is in the cooker. How often did you check your phone? Longer than 20 minutes apart? I think it gets harder nearing the end. Well it looks great! I may have to run my smoker tomorrow. Thanks for sharing the pork bum.

    I'm sure you'll get plenty of comments on this. But took your pork butt to 195 to 205 degrees. You probably could have finished your cook wrapped it in a heavy towel and stuck it in an ice chest, went to bed, and it would still be warm in the morning. It looks like it turned out good. Plus you could have seasoned it with a seasoning called" slap your mama". It's really good seasoning. It's a Cajun seasoning that has less salt than most others.
