Thanks for the brining tip. Mine will be done in the oven this year, but I will brine it for the first time ever. Usually I use bacon to keep the moisture, but it always seems like a waste of good bacon 😂. Fools Gold is amazing.

What salt are you using geeza? I never know what kosher is in the uk, usually use Maldon. Looking forward to trying it, love the fools gold.
