Or do they bill me afterwards for each site after using the service for a month? Or if I choose the bundle, do they prorate each website for $1 each?
Sure. Multisite is basically a feature that allows you to use one single WordPress installation to run multiple WordPress websites. Personally I am not a fan of this feature as it's quite complicated and restrictive in many instances.

Regarding the backups, it is worth going over it as ManageWP takes backups for 90 days where most hosts don't go past 2 weeks to a month at the most.
