MAKHMALI ROTI RECIPE
INGREDIENTS:
1 KG ALL-PURPOSE FLOUR (MAIDA)
1 TEASPOON SALT
HOT WATER (AS REQUIRED)
1-2 TABLESPOONS MUSTARD OIL
GHEE OR DESI GHEE (AS NEEDED)
INSTRUCTIONS:
TAKE ALL-PURPOSE FLOUR IN A LARGE BOWL AND MIX IN 1 TEASPOON OF SALT.
ADD HOT WATER LITTLE BY LITTLE WHILE MIXING AND KNEADING CAREFULLY UNTIL A SOFT DOUGH FORMS.
ONCE THE DOUGH IS WELL-KNEADED, ADD MUSTARD OIL AND KNEAD A LITTLE MORE TO INCORPORATE IT PROPERLY.
APPLY A LITTLE MUSTARD OIL ON TOP, COVER THE DOUGH, AND LET IT REST FOR 15-20 MINUTES.
AFTER RESTING, KNEAD THE DOUGH AGAIN UNTIL IT BECOMES SMOOTH AND ELASTIC.
TAKE SMALL PORTIONS FROM THE DOUGH AND ROLL THEM INTO 16 SMALL BALLS.
ROLL EACH BALL INTO A THIN, POORI-LIKE FLATBREAD.
HEAT A GRIDDLE (TAWA) ON MEDIUM FLAME AND COOK EACH ROTI JUST UNTIL THE RAWNESS DISAPPEARS, MAKING SURE IT DOES NOT BECOME HARD OR CRISPY.
ONCE ALL THE ROTIS ARE COOKED, LIGHTLY BRUSH THEM WITH GHEE OR DESI GHEE AND STACK THEM ON TOP OF EACH OTHER TO KEEP THEM SOFT.
YOUR SOFT AND VELVETY MAKHMALI ROTI IS READY TO SERVE!

مخملی روٹی کی ترکیب
اجزاء:
1 کلو میدہ
1 چائے کا چمچ نمک
حسبِ ضرورت گرم پانی
1-2 کھانے کے چمچ سرسوں کا تیل
گھی یا دیسی گھی (حسبِ ضرورت)
ترکیب:
ایک بڑے برتن میں میدہ ڈالیں اور اس میں 1 چائے کا چمچ نمک شامل کریں۔
گرم پانی تھوڑا تھوڑا کرکے شامل کریں اور احتیاط سے مکس کرتے ہوئے نرم آٹا گوندھیں۔
جب آٹا اچھی طرح گوندھ جائے، تو اس میں سرسوں کا تیل شامل کریں اور تھوڑا اور گوندھیں تاکہ تیل اچھی طرح مکس ہو جائے۔
پھر آٹے پر ہلکا سا سرسوں کا تیل لگائیں، ڈھک کر 15-20 منٹ کے لیے چھوڑ دیں۔
آرام کے بعد دوبارہ آٹا گوندھیں یہاں تک کہ وہ بالکل ہموار اور ملائم ہو جائے۔
آٹے میں سے تھوڑا تھوڑا حصہ لے کر 16 چھوٹی چھوٹی بالز بنا لیں۔
ہر بال کو پتلی، پوری جیسی روٹی کی شکل میں بیل لیں۔
توے کو درمیانی ہلکی آنچ پر گرم کریں اور ہر روٹی کو اس وقت تک پکائیں کہ اس کا کچا پن ختم ہو جائے، مگر روٹی سخت اور کرکری نہ ہو۔
جب تمام روٹیاں پک جائیں، تو ان پر ہلکا ہلکا گھی یا دیسی گھی لگائیں اور ایک کے اوپر ایک رکھ دیں تاکہ وہ نرم رہیں۔
