Even if I have thoughts like yours, seriously Saitama wins. because of the different character foundations. opm has a limiter concept while dragon ball doesn't have that concept. In the universe, OPM Goku is only classified as a being who is born with great potential. while if saitama were to be put in the Goku universe, he would learn ki quickly, learn god ki with a single glance and learn UI just by instinct.
when Garou teaches how to control the atomic structure in his own body and teaches how to control energy in the universe, Saitama is able to understand it in one glance. it will be easy for Saitama to learn hakai and various hax in dragon ball

Anyone who has seen the more recent chapters know how powerful Saitama is. Serious Sneeze blew the gas away from Jupiter, a missed punch deleted stars, Serious Fart let’s him fly through space at light speed, and when Garou tried to match his power Saitama exponentially grew so he couldn’t be matched. Add into the fact that Saitama is a joke character, and Goku isn’t makes me believe Saitama will always come out on top.

Fan animations gettin better and better everyday
I think OPM has a chance. I was going with Goku for so long but after reading the latest OPM chapter I switched. He sneezed half of jupiter, his punches became stronger and stronger and he kicked a hyperspace gate/portal. Also his stamina is over the roof, he is never tired, exhausted and never bled.
Funnily enough too, is even though Saitama lost his memories of the future with the chapter? He still retained his future's self power-growth. So it's (Saitama + X) times Saitama. Shit's going to get even more fucking insane. I hope the animator of these reads the new chapters. Hell, even ONE if not Miurta came out in the past and said Saitama's superpower was winning any and every fight. They just explained it in the comic why he's always the best and unphased. Lol.

PART 3 OF GOKU VS SAITAMA IS OUT
Chapter 160 -168 of one punch man shows saitama with all his strength. It also shows in the same chapter that he destroyed Jupiter by sneezing. Another chapter shows saitama fighting garou and wiping out millions of stars with one punch (More shock wave than punch).
actually it's not all of his strength as the manga states that saitama's power is always rising and that he had grown to the point where garou was no longer a challenge so his true power is unknown now and we now know that whenever saitama is pushed he grows exponentially until his opponent can no longer challenge him, as we all know goku never starts a fight all out he likes to match his opponents similar to saitama meaning saitama would eventually catch up to goku and eventually beat him

Saitama is confirmed to know how to perfect someone's techniques( not transformations ) in the latest OPM manga chapter. The only reason he didn't do any copying because he really doesn't need to, for he can just drive them away or beat the shit out of them with just his strength alone. As Mastered Ultra Instinct is a technique and not a transformation, achievable when the state of one's mind can move the body with instincts alone . Saitama could copy it (as shown when he imagined his inner universe) and perfect it as well. So really the debate right there is over. As much as I hate to consider the fact( as I am a dragonball fan since my childhood), i believe Goku would lose this fight.
even if he could copy goku's technique it wouldn't allow him to reach the same power level so he'd just get one shot anyway. Plus even if you can copy UI it doesn't mean he could just perfect it as we have seen goku do the same thing and just immediately copy a technique but he needed years of practice to allow his body and mind to access UI and then even further training to reach some form of mastery.
Also saitama would just fall apart if he tried to copy it for reference just read what happened to moro

Goku is known for breaking his limits, so to be fair, he's also limitless in a sense. Not only that, he learns and adapts through out his fights along with his actual body which imprints on the experience and learns to avoid or prevent being caught in the same situation. In all honestly though, if this was Manga Goku or even just GT Goku.. Saitama wouldn't had pushed him that far, imo.

garou ability to copy has no limits the problem with that is that garou can only copy moments of saitama power he cannot copy his power continuously so if saitama stops holding back less and less with the current power that graou has it would make sense that he would overtake him but holding back less and gaining new power is two different things
Edit: plenty of comments but nobody is giving a contsructive arguement against mine. Look ok goku in base is at least a universe buster. Scaling him based on being far more powerful in current base than ssg goku that fought beerus. He absorbed ssg into his base and got multiple zenkai boost during the entirety of super especially during the TOP arc. Scaling saitama based on his fight with boros (who saitama said was almost a real fight so my percentage is quite generous) assuming saitama was even using 1% of his power boros at best is a planet buster but feats only show planet surface level... so times that by 100 and saitama still isn't touching goku even in base. There really is no debate here goku bodies.

The strength of Saitama isn't infinite, but grows infinitely at every second even if he is not doing anything, i would say that according with the manga saitamas strength is more or less at perfect cell level without ki control. But strength is not the only ability that Saitama possesses, like the ability to time travel, so the only chance that Goku has of defeating Saitama is ultra instinct, with enough depth of ultra instinct Goku could dodge any attack Saitama tried, even the ones trough time.
Saitama could win if he went back in time before Goku transformed, but i don't think that would happen since he didn't did that before garou gained his powers and destroyed anything. There is also the explanation that Saitama was imitating garou so he didn't have control over when he would go back but garou did, if that's the case then Saitama wouldn't have enough control over that ability to use efficiently in combat.
Goku has superior level of strength capable of breaking not only the universe, but the entire dimension if not used carefully, even before he uses his super saiyan god. Goku could even deal with the reality breaking abilities from Saitama with his current level of ultra instinct, Goku could win if he used his full power right of the bet to defeat Saitama before Saitama evolved to his level of power or before Saitama tried any random ability.
Now in reality, considering their personality, they would be exactly what each other wants, a oponent that is powerful enough to give them a good fight. But in the end Saitama would probably win because of Goku letting him become stronger, and Saitama would probably enjoy that fight pretty much and wouldn't be so indifferent about it like everyone thinks, he would probably react the same way he did when he had that dream.
Yeah this is about right to me. But I would but him at Dragon Ball Super Goten level or opening of the Buu Saga rusty Gohan level

Here is my prediction for why either wins:
1) Goku wins awakening Ultra Instinct like how he first did and claims the win (aka Saitama was beating him but then turns it around).

Uh. Funny thing about Saitama. Is... Saitama functions both like a plot device and as a character. He continuously grows like an exponential growth chart, and uh. Doesn't need to breathe in space. He sneezed Jupiter down to the core, farted his way from Jupiter back to Earth, and can kick aside reality-tearing/warping space gates (think wormholes) aside with his bare feet. Not to mention he can tolerate cosmic radiation that makes Chernobyl look like a casual stroll through the park. Dude's pretty busted.
Nevermind the fact he did everything above? One-handed. He even flipped the crust of a moon over like it was a table! Saitama's really on a fucking other level. I can't wait for Dragon Ball fans to see the rest of OPM animated and done justice by Madhouse.

At the end of the day, Saitama is a gag character- he is programmed to win, even against goku.
