This is why my homemade rum cake is moist and delicious

  • This rum cake is light, fluffy and delicious, if you don’t want to make it from scratch then use a yellow cake mix as shown in my other rum cake video.
    Rum cake recipe
    3 cups cake flour
    1 tbs baking powder
    1/2 tsp baking soda
    1 tsp grated nutmeg
    1 tsp salt
    1/2 cup French vanilla pudding mix
    1 tbs vanilla
    1 cup buttermilk
    2 sticks of butter
    1 cup brown sugar
    1 cup granulated sugar
    5 eggs (1 tsp orange zest)
    1/3 cup vegetable oil
    2 shots cup Dark rum
    1/4 cup White rum
    1/2 tsp almond essence
    1/2 tsp rose water
    Note: please use room temperature dry and liquid ingredients
    Rum butter sauce
    5 tbs butter
    1/4 cup sugar (any sugar is fine)
    Rum (your desired amount)
    2 tbs water or milk

    Hello - I fell in love with Rum Cake when a friend of a friend brought one to a Birthday potluck. Best cake I had ever eaten....and silly me didn't think to ask for the recipe....so I've been on the search ever since. I have made a couple, the latest one was for Thanksgiving yesterday.
    Some have used the pudding and others didn't. Some used a box mix and others were completely from scratch. Yesterday's cake was from a blog, and looked so promising since it had buttermilk, sour cream, oil, 4 eggs, and 2/3 C Rum (I used spiced rum) in both batter and glaze (I chose to use a little less in the glaze) ...both the batter and glaze used a combination of white and brown sugar ..but still, something was amiss.
    So here I am again, on the search....and I found your recipe today and I want to give it a go....but need clarification on a couple of things so I'm hoping that you'll respond (I see you haven't responded to previous comments)....
    1) Please clarify and confirm you said 280 degrees Fahrenheit? (everyone I've seen and made was baked at 325)
    2) Please give a ballpark idea of how long it bakes for....especially at the lower temp
    3) Please say whether you used cook-style pudding mix or instant (all other recipes always state instant but I don't think I've seen "French Vanilla" in instant, so that has me questioning what you used

    UPDATE: I was so eager to try this recipe that I went ahead and made one tonight, with a few slight tweaks. I didn't have Rosewater, so that was omitted. As I was pouring the buttermilk I realized I had accidentally grabbed the heavy cream so I went ahead and used half a cup of heavy cream along with the one cup of buttermilk. I used a box of instant vanilla pudding because that's what I had. I didn't have an orange to zest so I used three drops of orange extract in both the batter and the glaze. And went ahead and baked it at 325 ° for roughly 65 - 70 minutes....
    Haven't actually cut into it yet cuz it's still cooling plus I know you're supposed to let them soak up the glaze for 12 to 24 hours for best results but it did overflow My Pan just a little bit so I got to taste the cake and I dipped it into the glaze...
    OMG...DAY n NIGHT DIFFERENCE from the recipes that I have used up to this point! The addition of orange, nutmeg, and almond made a huge difference. ( I'm half tempted to maybe either cut the nutmeg in half or in addition to that nutmeg and maybe a half teaspoon of cinnamon as well...?) I also added a little over a quarter cup of brown sugar to the glaze as well
    Don't know if I would say this is the recipe that I've been in search of, but this cake is equally as AMAZING and I will probably continue to use this recipe going forward. I'm completely satisfied! Thanks again for sharing!!

      FYI...I made another cake night before last trying half the amount of nutmeg and adding the difference with cinnamon...it was good but think I'll stick with your original amount of just nutmeg

    cake looks delicious.. just a caution the rum glaze cannot be poured on the cake hot as it will make the cake gummy.

      This took around an hr at that temperature, it depends on the size pan you’re using

    how many grams is in that butter packet? My mixer had a tough time making an emulsion from 2 sticks of butter to 200g of white and 220g of brown sugar. The first time the emulsion broke and it was a complete disaster. My 2nd attempt, I got the emulsion to stay, but it never got as fluffy as yours (if I increased speed, it would break, so I kept medium speed). I see other recipes with 1 stick of butter to that much sugar - maybe this recipe is just much more buttery in nature? My 2nd try is in the oven now, hopefully better.

      You can use Appleton rum if you have that, if not just use white rum
