How to Prototype a Beverage Flavour

    Making a new flavour can seem hard, but here is an easy and cheap method to experiment with flavour combinations that don't require a large investment in making the beverage. Perfumers often use this technique, and it works perfectly well for flavourists. It should be the starting point for any flavour development project.

    I am quite a new viewer and I am slowly catching up. The carbonation series was great and this flavor series is coming along great. You have quite a unique channel packed with dense information for us soda nerds.
    I was watching a video about Olipop; it would be very interesting to hear your opinion about this trend of so-called healthier sodas with less sugar, probiotics, fiber, and all that stuff. I think it is becoming a strong trend. Thanks

      Thanks, I don't have a preferred vendor, they are pretty much all the same for small bottles.

      that's not really the content Darcy has been making so I don't know if that is on his schedule, but cocktail time with Kevin kos has a few interesting videos about that.
      I have personally clarified cocktails and kept (in the fridge) for over a year with no issues, out of the fridge flavour and colour chance a bit faster.

    Perfumer's trick: If you bend the strip upward, it wont contact your countertop when you set it down.

    Cant wait to formulate a knock off Dr. Pepper and call it Dr. Darcy or something. Probably not going to deal with the supposed 23 flavors like the original, but one of them might just end up being cognac.

    Hi Darcy, when it comes to aroma testing, do ratios matter? In your video you’re comparing two aromas in the same amount.

      It can for some ingredients, like butyric acid, which can help create natural fruit flavours but smells like a dirty hobo bathed in Limburger cheese. For aromas that are pungent like that, using it at smelling concentrations of 0.1% or less, compared to 1% solutions, is beneficial.

    Do you think you could make a video on how to emulsify flavor molecules without syrup to make a flavored sparkling water such as bubbly?

      Look at his videos on flavor essences. He states you can use them in cocktails and such it should be fine in sparkling water. You're just making a soda without the sweet. A little acid to "brighten it" could help too.

    Slaving away in a basement at night for 6 months and spending countless $ on oils, etc. when a focused AI prompt could probably get a guy 90% on his way to a newly-marketable soft drink or soda... Thoughts?

      AI doesn't have a sense of taste, nor does it have access to most formulation data, so it is just making random combinations. ChatGPT can make modified versions of known formulations, like cola, but the chance of it making something unique that humans actually like and is safe to drink is low at this point. Yes, I've checked this in ChatGPT4. And no doubt it can be super helpful, but the true test is how it tastes.
      The reality is that a big marketing budget is a better predictor of success than a decent formulation. Think Prime, sweet, fruity, boring flavours we've all tasted before, but the cult of personality propels it forward.

      Even if it worked it would be lazy and wrong. AI is the death of creativity.
