My takeaways: - pan size matters, about 8.5 inches for 3 eggs - nonstick should be new or well maintained - high pan lip, as in the video - see how they tear the egg a bit? Don’t obsess over perfection, the omelette will form by the time you can roll it in the pan - if not confident in flipping, bump the pan just a few times then “cheat” with a rubber spatula and pull the seam towards you, rolling into the handle edge of the pan, hold it there for seconds (as in video) and the omelette is formed!

We have a custom to eat raw egg in Japan. This is because eggs in Japan are strictly inspected for eating raw. Basically I can eat raw eggs safely. I don't know conditions in the other countries....sorry
Eggs in Britain and the rest of the EU are kept at a cool room temperature but otherwise left alone between chicken and shelf. Eggs in America are washed with detergent, sanitised, and then have to be refrigerated because of the loss of the protective cuticle. I'd feel safe with any egg that wasn't bought out of a fridge, because it means that a clean egg came from a clean chicken. If I had a washed egg, I don't know what kind of mess might have been washed off. I believe that most US chickens are vaccinated against salmonella now (you can wash it off the egg, but not out of it), so that's better. If you live outside the EU or America, find out how eggs are handled in your country.
