i am a chef over 20 yrs and the worst people to deal with are owners ...one chef 70+ hours...should be able to clean after himself with no kitchen porter cooking for masses of people with random food orders..ingredient inventory orders, plate costing , kitchen management , hazard analysis , hygiene rotas and deep cleans ,staff meals etc we only have one pair of hands!!!!! and owners are LUCKY to have us!! you would`nt see anyone who works in a office or similar industry have to leap over these hurdles and stress working like a dog in a hot stressful enviroment ...but its always well your a chef thats what they do...no not anymore this sector is done treating us in this manner for the sake of our sanity
All capt Sandy's fault , she keeps employing these second rate chefs , .On a yacht there is NO hiding place for for badly organised so called Chefs . Its a damn tough gig for a chef . Capt Sandy should do off season trials for chefs instead of believing the CVs , put them under pressure during a trial , give them time limits to prepare brkfst/ lunch/ dinner , pay them a couple of days wages . I did the job for a couple of seasons and believe me , its hard , but financially rewarding .

Where is the sous-chef or assistant getting the provisions? Why is the chef finding out about bad items at start of service?

He’s solo and gets paid big money for this job. His only contact when it comes to provisions is between him, the cap and the Chief Stew

On board, Tom is the the person 'solely responsible' for the foods 'quality, presentation and ensuring that 'if' the product 'is' delivered within the food hygiene & safety requirement, he needs to ensure that it remains that way right up until plating it for human consumption. If it is not delivered within the 'required' standard, then sure he 'will and should' shout about it. Would you eat bad, contaminated food!..

cause she convinced/persuaded him to take up the position knowing fully well that Tom worked as a chef with several in a restaurant and had never worked alone on a yacht before this charter.
I feel Tom needs to grow up. My son was a top Chef and yeah they get temperamental but he needs to stop going to Malia, she has her job to do and I felt for her so bad. Shes too nice. He is not the nicest of Guys and showed himself up for sure .

Tom shudda just walked off when he got nil support from his Cptn Sandy, he was saving their season, and her reputation.
