🇬🇾 here. Seafood curry you make a sauce first. Curry powder goes on the shrimp but also in the pan to saute with the onion & garlic. Then when you fry that paste a little you add water or coconut milk you thyme and bay leaf. Green seasoning goes on everything and you essentially poach the seafood in that bubbling sauce so it isn't tough. Just some tips for a West Indian, I know everyone doesn't do things the same way.
I fix onions in my salad and stuffing chicken veal I also do a lot stuff carrots 🥕 corn celery that why I think you should do stuffing or turkey casseroles

Seafood defrost tip*defrost Always in cold water, hot water cooks it then when you cook it, it can be over cooked & tough. Looks good!
