      ​@johnwells62 I do partially agree. You can make a dish with similar flavours, but at that point, it is no longer coq au vin. Word for word it translates to 'cock with wine'. However in this case carbonara means 'coal miner's wife', which is likely named after the specs of cracked black pepper throughout the dish made by the coal miner's wife. Making beef bacon an appropriate substitute for dietary restrictions. 😉

    As an italian muslim well done! also you can use any fatty part of the beef for the carbonara since its the melted fat that gives taste the taste to the noodle. I love that the egg and pecorino mixture is being added off heat since you don't want to cook the egg and thats the main point 👏👏👏

      I mean no, the difference will be big, there is a reason why ppl won't even accept any other pork bacon than guanciale at a restaurant. Obviously not even using pork will change it even more.
      However, that shouldn't gatekeep him from changing the recipe to make it Muslim friendly.
      It looks great, it is probably delicious, I am fine with calling it carbonara, but it will still be different from traditional carbonara.

      @@derke123 what ppl do privately and what they'd accept at a good self proclaimed traditional restaurant are two very different things. I edited to clarify that I meant accept at a restaurant. I privately also did carbonara with some random whatever bacon and cut a little excess porkfat to it to get a somewhat reasonable ratio. I mean, I will use what I have at home, but I'd definitely complain at a good restaurant if my carbonara'd start tasting like rosemary and sage.

      Another tip, add the cheese separately at the very very end of cooking. Good way to ruin a good cheese like that is too much heat.

      Adding a bit of guanciale fat to the yolk/pecorino mix really makes the difference for me.

      There will be a lot less fat using this beef bacon instead of guanciale, but works well for the original recipe.

      Id recommend beef bacon. In the traditional carbonara, the pork fat gives the dish a lot of its flavour. So beef is a better option cause turkey bacon isnt fatty enough. Although I'm sure it'd be good either way.

      I'd go with a fattier type of meat because the pork fat that renders off of guanciale is integral to the dish. I think turkey bacon would be too lean. Beef bacon is an good alternative. If you don't eat beef/red meat, duck bacon is another great choice.

    Great recipe; one tip for the viewers, mix a spoon or two of the pasta water with the ‘paste’ before throwing it in the pasta. This loosens the mixture and premelts some of the cheese. Personally I do 1 whole egg and 1 yolk for 1-2 people!

    Try mixing the pasta water egg and pecorino in a seperate bowl, this makes sure the egg doesn't cook while giving the pan enough time to cool down. Also you can use garlic if you're not using guanciale.

    You can also use some regular bacon and parmesan cheese as well. Doesn't taste as good as pecorino but still pretty yummy. I also use 1 whole egg plus 2 egg yolks for extra creaminess.

      you can use parmigiano regiano if you can't find pecorino at all (it's expensive and hard to find in a lot of countries) just make sure it's good quality

    That is an absolutely beautiful carbonara! Bellissima!! @Vincenzo's Plate would be very proud of you, brother!!!
    Guys, remember - it's about the fat content of whatever meat you're using. Normally you'd render guanciale till it's fairly crispy, and there'll be plenty of fat that you can save for other dishes.
    Our brother used beef bacon that still had enough fat for the carbonara, so he didn't have to add EVOO, butter or any other fat. Turkey bacon is pretty lean, so I'd use half EVOO and half butter. This works especially well with mushrooms, zucchini and tinned artichoke hearts, I've found!
    Remember, carbonara is about the fat, the Pecorino Romano, and that freshly ground black pepper! Linguine, tagliatelle and fettuccine are also acceptable - in fact, traditional carbonara uses linguine! ;)

    Thank you for switching to egg yolks, they are the way. I see too many people using whole eggs for their videos. Yolks are very traditional, only ever seen yolks used in Italy. It makes it much easier too

    From a roman guy (carbonara is a roman tradional pasta), u have done all perfect, the only thing is, as u sad, to use guanciale as meat.

    As an ex vegetarian with Muslim friends, many don’t know that traditionally Pecorino and Parmigiano Reggiano are not halal nor vegetarian. Any cheese using calf rennet obtained the traditional way is a grey area, so make sure you look for microbial rennet. I can’t have either anymore, but thought I should spread wisdom to others that I learned the hard way 😔

      It is a variation of carbonara where only guanciale was substituted with beef bacon for religious reasons. So yes, it is still carborana.

      As an italian, this is exactly PERFECT! From the ingredients, from the executions, to the cream sauce and mixing (you don't have to cook the eggs) The only change is the guanciale, that he told about. Stfu non capisci niente

    Good halal option, but the original recipe calls for not smoked but salted guanciale (porks cheek) with black pepper,so an even better choice would be salted beef cheek
