They're addictive. soak the yolks in a mix of half soy sauce and half mirin in the fridge, and soak a paper towel in that mix to lay on top of the yolks so the tops are also cured. I'm wondering if you could make pasta using those yolks, but like immediately after 6 hours of curing so they don't get too jammy to make the dough. But also just try those on top of ramen or rice cause hot damn they are AMAZING.
After boiling you should have fried it in butter and a light crumb hit with a little sea salt and black pepper and some crispy pancetta and got a bit of a crunch on there... plate up add feesh grated parm.. wouldve been perfection 🥰

There are coco amino sauces that definitely are quite comparable, just a little sweeter if you are allergic to soy. But always research first.
use twice the amount of soy sauce and reduce it by half, same amount of liquid but twice the flavour
