  • Inspired by the square, mini individual brownie that’s making a hit now! You can fill it with any spread, chocolate or jams, etc and top it with anything delicious.
    This recipe is as the way I like it and for the sake of this video, I just put the readily available toppings and fillings that I have in hand. The options are endless. Go wild and be creative with these. You will definitely love it!

    Preheat the oven at 180˚C for 10-15mins.
    Yield about 15-16 pcs. I use a muffin baking tin 12 cavity. If you can find the brownie squares baking pan, that would be superb. (I don’t have the mini squares brownie/cake pan so I use the normal round muffin baking pans.
    \\ Ingredients
    270g Butter
    115g Dark Chocolate Couverture 70% (I use Belcolade) **
    75g Dark Chocolate Couverture 54.5% (For this I use Callebaut) **
    135g Castor Sugar
    160g Brown Sugar
    1/2tsp Coffee/Espresso Powder (I just use Nescafe instant coffee powder)
    47g Cocoa Powder
    45g Black Cocoa Powder ##
    1tbsp Vanilla Essence
    3 Large Eggs
    80g Plain Flour
    1/4tsp Salt
    For Toppings and Fillings:
    Nutella Spread
    Lotus Biscoff Spread
    Lotus Biscuits
    Almonds
    Walnuts
    SeaSalt Flakes
    》chill the spread that you will be using beforehand so that it will be easier to fill the brownies
    **The brand of the chocolate is your choice. Use couverture chocolate for a wonderful chocolatey taste. You can choose to use all 70% or mix, that’s fine too.
    I use Barry Callebaut Black Cocoa Powder. You can buy this online from Shopee.sg. Can also try Tomiz Black Cocoa Powder from Phoon Huat. All this I purchase from Singapore. I’m not sure how to get it from other parts of the world. In Malaysia, try malaysiabakery.com, lazada.com.my or shopee.com.my.

    Hello! This looks so good! Was wondering if I could fill the filling with matcha or horlicks instead? But how do I make the matcha powder and horlicks into a spread consistency? 🥺🥺

      Hi. Im not sure abt making these two fillings for this brownie. Nvr tried. Bt maybe, just maybe it adding those flavours to white chocolate, like ganache, then once cooled, u scoop and freeze it and put it in the centre before u bake? U can try... i hope it works bt pls research a little bit more coz im not an expert. Sorry 🙏😊

    Can I ask is it possible to cut the sugar without affecting the texture as we are a bit big in size already 😅. Thank you

      Hi, tnx for ur feedback. U cn try substitute 25g or all of the 54.5% dark choc to 70% dark choc. for one, tt wld reduce a bit of the sweetness bt it might be a bit bitter. Or u can reduce the sugar by 10-15g each. Im nt very sure hw tt will turn out tho.

    Can I change black cocoa powder with active charcoal?

      I think active charcoal will only be for the colour but black cocoa powder has cocoa in it. Maybe not the same.

    Can i know you use which brand cocoa powder.. how to see which is Dutch process... is Van houten cocoa powder ok to use....? Thanks a lot... 🙏

      I think dutch processed is acidic. Van houten professional is dutch process. For best cocoa powder, i would use valrhona cocoa powder, its 100% cocoa but its expensive 😊

      For the black cocoa powder i use barry black cocoa powder. For the other cocoa powder i think for this i just use gold tree coz its for my personal consumption only. But if u really want it to taste good, i recommend valrhona. I love the chocolate taste if i use valrhona.

    Hi sis , i have two questions.
    1.Can i use the chocolate button about 54.5 % only ?
    2.Can i just use the normal cocoa powder ?

      Hi, u cn use the 54.5% choc to replace the 70% bt the chocolate taste will be less.
      If u dnt use the black cocoa then its not the blackout brownie. U cannot substitute the black cocoa to the normal cocoa powder, then tt will be too much cocoa. U will hv to adjust the recipe if u want to make these changes.

    Hi i notice your fillings are fudgy and gooey. How do i make it like this. I tried using peanut butter and Lotus biscoff, but they are like in chunks, no lava =)

      Hi, it was in room temp just a 1-2 hours aftr bake. Once its cold it wont melt off like tt. Bt not all filling will ooze out like tt. The one i put chocolate doesnt seem to be melty. I think if put more fillings it might be more melty. Also, u cannt over bake, then the brownie will be less fudgy inside.
