    Tisanes and infusions can be terrific to flavour your kombucha (like juice) in the SECOND fermentation.

    I successfully switched a SCOBY to use for brewing Rooibos tea! I like the Rooibos to drink in the evening for a caffeine free option!

      Jay Thomas, I used a SCOBY and starter tea from my (black tea) hotel for the first batch of Rooibos in a half gallon vessel. It fermented well and formed a new SCOBY. I then used about half of that tea and the new SCOBY to brew another half gallon batch. After that I used both new SCOBIES and all of that tea to move up to a gallon sized vessel.

    I just brewed 2 seperate gallons. One using the positively scottish and one with english. We are curious to see if it has a different flavor profile. This will be our 3rd batch. We are experimenting to see what flavors we like in 2nd fermentation. So far, fresh turmeric root with ginger root is our fav. Btw, just received your brew book. Love it! And named our hotel scoby one kanobi

    So I recently made a batch of kombucha using only hibiscus flowers, knowing it might compromise my scoby for future batches. Now using that very pink scoby for a 1/2 black tea, 1/2 hibiscus batch. I’m saving the original scoby for my next “tea only” batch, but do you think I’ve ruined my scoby for future use that has been exposed to hibiscus? Can I use it for just hibiscus related kombucha? The hibiscus is delicious, btw, I did a second ferment with just a little honey added to the bottle.

    Yes! Why not!
    I used my scoby with my kombucha black tea for my yerba tea.And continous my scoby to make other kombucha. I ever saw other video about kombucha (maybe from Turkish/Germany I forgot) ,Using scoby for different tea that's good too!Before using scoby they cleaned! .Using scoby kombucha black tea into kombucha green tea or for yerba tea!

    I'm buying a green - black tea along with spiralina, kiwi, chlorella, and a kombucha culture. It is AWESOME! It is a store regular brand, but I sure would love to make my own! Never made kombucha but sure would love to make something like that!!

    I found out that it is easy to get a great kombuch drink using the Yerba mate (with the botanical name Ilex paraguariensis). I just used starter + scoby from my black kombucha jar adding the yerba mate liquide I made ( axact same as I do for the blak tea for my regular blak tea kombucha ) and it is great in taste , working exact like regular tea made kombucha and it's scoby looks the same , it has the same smell becoming sam shape as all other scobies though a bit drker .

      Gady Fishel I love Yerba mate. I think I’ll try making a bath with it as yours seemed to work. are you planning on keeping your Yerba mate scoby separate now?

      @@lizzzarduh be carefull not to make too strong Yerba tea. and if you wish to continue with this tea you should separate the SCOBY and the Starter. you may also make a bland of Yerba with Black tea and or Green tea.

    Thank you for the helpful info! I just made a batch using half black tea and half Yerba mate. I hope it works out! Was wondering if you could make a video about how to share a scoby with someone? How to ship it package it and what to include such as starter tea, how much, etc.

    I grow a scobby from a store bottle and the green tea is growing faster. The store bottle was made from green tea too. I don't know if it's a coincidence 😬

    In the past, I used black tea exclusively because I was a beginner many years ago and told to only use black tea. I started up again and brewed green tea because the seller said to only use green tea. Once my scoby grew, I used the new one to make a batch with 1/2 green and 1/2 black tea. :) I think using green tea with jasmine will be fine...it's the citrus in things like Earl Gray tea that's a no-no, I would think, and also no-no to herbal teas and such.

      Doodah Gurl I believe that GTs makes his kombuchas using a mixture of black and green tea. So you are in good company if you use two teas like he does. :).
      Another odd fact I’ve read is that he sweetens it not with sugar but with Kiwi juice.

    Funny... I started to do this 6 days ago , I switch to green tea and I realized I like the taste better but I feel it takes a little more time to brew this time, it has been 7 days and I can't really taste the yeast from the tea, there is some yeast taste but not as strong as on day 7 of my previous brew with decaffeinated black tea ; I can't tell if this is because of the green tea vs the previous brew with decaffeinated black tea or if my scoby is "upset" 😂 sort of speak ....and it takes more time to brew into a green tea kombucha.
    Thoughts please!. Thanx!
    P.S. Your video about how to clean the residue from the older kombucha bottles ( baking soda + oil-any) is a killer!! 👍❤️ Greatly appreciate it! 🙏
    Also using a stainless steal tool to mix or taste it does NOT kill the scoby or the kombucha 😉
    And.... can I make ginger ale with a kombucha scoby? I have that in pending..... as well. 😆

    What if you don't want to use black tea or green tea, but an herbal tea like let's say chamomile tea? Can you make kombucha from chamomile tea?

    My scoby is super h hardy, perhaps because it has adapted to a coldish environment (68 day/60 night)

      No you can't use those, please buy the book and save yourself some grief. Use either Black, Oolong or Green Tea...pure.

    I use 3/4 of Decaff. Green Tea and 1/4 of Decaff. Black Tea....always i have never just used one Tea always the two Tea's.

      I bought a jun scoby from a brewer in my country. My kombucha scoby grew from plain kombucha I bought at the supermarket.

      Normaly with true bergamot oil no. But I have read some comments where it did work. I guess its because most Earl Grey isnt flavored with true bergamot oil.

      I made kombucha for my friends for three years only using Earl Gray and green tea. I made up to 10 gallons a month, and I never had a problem and it was the best tasting kombucha, anybody ever had so yes you can use Earl Gray very successfully with high quality Earl Gray that has real Bergamont oil

      It may end up in a weakened state, but chances are it'd be doable to a degree. Not ideal in the slightest, though.

    It looks like you had loose tea sitting on your counter. I thought you would also mention how much tea to use when using loose tea vs bagged tea. I figured it's something like 1 loose teaspoon for each tea bag.

      I mention that in my first fermentation video. I like to use 3 tbsp. of loose leaf tea per gallon batch. :)

      Some people actually swear by using Earl Grey, but I've also heard stories of others who get moldy batches every time they use earl grey. The truth of it is that everyone's cultures are so different (and tea brands all process their tea and use different flavorings to get that bergamot "earl grey" flavor into the leaves) that it's hard to give a one-size-fits-all approach. In general, I advise against using any flavored teas because based on my research and the numerous brewers I've spoken to, it ends up making their batches more susceptible to mold. But if you're open to experimenting, definitely go for it! Just make sure you have some backup SCOBYs and starter tea on hand, just in case something goes wrong. :)

      @@YouBrewKombucha I guess the earl grey that is flavored with real bergamot oil wont work good with the scoby because they dont like essential oils. Others may have artificial flavors that imitate bergamot oil and dont hurt him.
