It is very interesting to note the similarities in the cuisine of eastern coastal states! Down south in Tamilnadu neer aagaram or pazhayathu is preferred in summers. It is very similar to phakala. The leftover rice of previous day is soaked in water and the next day morning, people eat it with buttermilk, small onions and green chillies. It provides cooling to the body and due to fermentation it also helps maintain gut health by introducing good bacteria into the system. Loved this video!

We call it aloo pitika in Assam.. and that recipe in Assam calls Pointa bhat .. fermented rice with fire roasted onion potatoes and small fish .. mustard oil etc! My California Oriya friend taught me your way of pakhal or pakhar .. we make it in humid Florida in summer months !! Love it ♥️
