They seem to be afraid of the Habanero in Merida! Cochinita with habanero is a must…the red onion with vinegar cut the heat and allows the fruity flavors of habanero!
When I went there most places didn’t include habanero… the Chaya Maya was one that had none! They said most people didn’t try it so why waste it.. but definitely adds dimensions to Cochinita!!! The vinegar and habanero is delicious

@@ManuelaSilvaR They do not have the "homemade" touch in the way they prepare the food, the flavors are not the ORIGINALS of the region, because they are prepared in a commercial way. You can eat the real food in the local towns and markets.
Maybe try at "principe tutul xiu" if you want a restaurant or "4 hermanos" if your ok with a smaller place. But both places have better and more original taste than chaya maya
