It would be interesting if you could try food from Zimbabwe 🇿🇼.. for your swallow/starch you can use rice with peanut butter (there are many vids on here youtube from Zimbabwe that can show you how to make it). Or you can try our traditional sadza (how to make it is on here youtube too). Dishes of your choice can be cow foot, with separate pumpkin leaf soup with peanut butter. Or hard chicken in soup or any meat of your choice with separate okra soup... or green leaf vegetables like rape, covo. You can eat it with your hands. Wish you all the best on this challenge!
