The Ultimate Garlic Pork

  • Learn how to make a Caribbean Christmas Fave.. Garlic Pork, in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com This Portuguese influenced dish is made around Christmas time in Guyana and Trinidad and Tobago.
    You'll Need..
    2 scallions
    2 head of garlic (20-24 cloves)
    1 tablespoon salt
    1 tablespoon brown sugar
    5-8 bird's eye peppers (any pepper you have or like using)
    1/2 cup chopped parsley
    4-6 pimento peppers (seasoning peppers)
    10-12 sprigs thyme
    bacon fat (or any type of oil or fat you would like to use).
    3 1/2 - 5 lbs pork

    GARLIC PORK IS A Guyanese dish..We eat this in the morning for breakfast during Christmas along with homemade bread..It originated from the Portuguese in Guyana ..its awesome..Good job Chris!!

      No it is not. Garlic pork is also a Trini Christmas traditional dish originated from the Portuguese influence in Trìnidad. The native indians certainly did not have garlic

      Truth be told, the Portuguese from Madiera brought Garlic Pork to both Guyana and Trinidad and Tobago... It did not originate from the native Indians tho!

    Chris you read my mind! I was looking for a pork recipe to add to my Christmas meal and I literally had no idea what to do. I planned my meal just last night and the pork was the last thing I was pondering over. I'm adding this, you saved my Christmas meal. Nice going Chris. Not all hero's wear capes lol.       you can leave the skin if you wish. The key is a bit of fat though

    Chris, I remember your 2010 recipe. Can't believe it's been that long we have been on this journey. Anyway, you may want to speed up the video at times;
    like when you are prepping. ( cutting up the meat etc).

    Your attempts at a very special authentic Guyanese tradition is appreciated but it misses the mark on several levels. The most significant error being the use of pimento pepper. Although most Trinidadian dishes seem to start and end with pimento pepper or shadon Benny, we do not use those spices in our cooking. Pimento competes with the intent of the garlic flavor and therefore is not authentic. Nonetheless, I can see why you’re intrigued with our cooking - it is simply amazing. Thanks for honoring Guyanese cooking. 🎄🇬🇾🎄
