    love garlic pork - been eating it every christmas since i was about 10 years old. As she said its a Guyanese tradition. My mum made it every year. unfortunately i lost my mum this year unexpectedly so never had the opportunity to clarify the recipie with her, so i thought i should take up the mantle and make it this christmas for my daughter who loves it.

      Can this be grilled instead of fried?

    Looks good. Your pork is already cured by the vinegar so you don't need to worry about how well cooked it is.

      I like to cook it for tenderness. The vinegar makes it extra tough.

    We use the boil fry method on my family but I love this recipe🇬🇾

    Wish I still ate meat, garlic pork and peppa pot with plait bread is Xmas. Let’s not forget black cake and sorrel! Amen

      You can use black bean cakes. Here's the short cut: use canned black beans. Drain ( save juice). You can rinse the beans if you don't want the salt. Put the beans in a plate mash them to the consistency you want. Use juice with other ingredients garlic etc.add to bean mixture. Not enough to make soupy. Maybe a quarter cup. Cover in refrigerator overnight. If it's too dry use a little more juice the next day. Make bean patties. I prefer small ones. Grill on a piece of foil until crispy or flour lightly and fry in a little olive oil. I like garlic flavor oil. Enjoy!

    If you don"t eat porK...can this recipe worK for beef short ribs and lamb aLso?

      Yes I've seen other people used beef but without bones.

    Nicely done garlic 🧄 pork. Does it make a difference if I refrigerate the pork? I am not a fan of meat not refrigerated for a few days. 🇬🇾🇬🇾🇬🇾🇬🇾

      Yes dear wash the pork first with vinegar or lemon juice or both.

    Does d preserving softens d pork so it will be soft and crispy after frying

      I don't think it softens but getting a good cut of pork is what makes it tender like the pork shoulder/ butt. The leaner parts are more tough.

      Yes it is. Makes a huge difference in taste

      Sugar is always used when pickling or brining stuff. Look it up.
