Vermintide 2 on Cataclysm Difficulty with commentary. Hunger in the Dark map playing as Grail Knight with Bretonnian Longsword and Bretonnian Sword and Shield, though only using the Sword and Shield.
    This Grail Knight build is:

I also use 4 mods, mostly Quality of Life improvements, all of which can be found on the first page in Steam Workshop in Top Rated All Time and can be used in the Official Realm. I use the Bot Improvements - Combat, Numeric UI, Crosshair Kill Confirmation, and Notice Key Pickup mods. The Bot Improvement mod used to be Sanctioned but currently isn't for whatever reason. You can bypass this by checking the Auto-Disable Unsanctioned Mods in Official Realm checkbox in the mod menu and it should still load the mod up in Official Realm for you to play with.

Bret sword and shield never really clicked for me when I first played it, combos feel totally different from other shield weapons and the horde clear light 1 spam is pretty slow. But I've been using it after watching your other GK vids and I really like it now. I like how you can start everything with push-light followed by light 1 or heavy 1, and then chain from there, light 1 to heavy bash-light bash. Sometimes I do push-light into weapon switch and then chain light 1 on bret sword. The anti elite heavy 1 is a really nice attack, especially when followed by light 2 and then thrust or block cancel. I think it's pretty well suited for GK being both frontline and anti-elite.

from my experience "newbies" GK tends to use more light attack spam + push to deal with hordes, in this scenario Virtue of the ideal will be strong, but as the GK gets more experienced they learn how to control weaves with heavy attacks, then Virtue of Heroism kicks in and makes GK the dps horde control elite/monster killing. I guess it's just a kind of playstyle, I had lots of trouble following builds because they didn't fit my playstyle, and I took some time to figure that, one exemple is that I use now Parry in my shade's daggers, so I can just parry overhead and blur but you won't find that in builds, I just figure out my playstyle and played around it.
By the way it seems a nice build, I wonder how stronger can it be with a handmaiden in the party

Using parry definitely takes practice, and on Shade can be incredibly strong. A lot of the game's mechanics and ways to play can require some different way of thinking that you may not have thought of before, and even after that, take some time practicing and getting used to. Sounds like you've got the right experience.
With a Handmaiden on the team with this build, it's actually a huge meme mowing down hordes with light shield bash spams. Almost makes you feel like you're on a horse plowing through infantry in Total War Warhammer.
