As a person who works in public sector I can tell you that no one will ever take away your education and work experience, with that I am saying jump. If in the future things change and you see the need to go back to a 9-5 you can do it then ❤
The first mistake you did with the meal was indeed the use of red wine instead of white, but to combat the dryness or lack of sauce you should reserve about a cup of the water you used to cook the pasta and add it gradually until you are happy with the consistency of the sauce. And fresh parmesan cheese is way better than the pre grated one and helps with emulsifying the sauce. Hope this helps when you decide to recreate the dish again.
