Some do it for the health benefits not necessarily because they don’t want meat. I tried it for a while for health purposes but still wanted that feeling of meat because I love it, just couldn’t eat it at the time.
I don't understand it, either. We were vegan/vegetarian when I was a kid, and I thought most of the "ooh, this tastes just like meat!" dishes were not even close. They may be good for what they are, but a tofu burger will never be the same as a beef burger. But that's just me!
