Excellent video! It's great help for me that you explained the technique on cutting the room temperature unsalted butter using a spatula only after mixing with the dry ingredients. The word, scone, is difficult for me to pronounce too. I would use my upper and lower front teeth to produce the "s" sound and then say "cone" as in Ice Cream Cone. English is an extremely difficult language and I appreciate all you do. I already clicked like and subscribed to all your wonderful videos. Thank you so very much.
Just tried your recipe... the dough was so sticky. Tried saving it by adding more flour.. still didn’t turned out looking like yours. Didn’t give up, I tried a second time. Added lesser milk and egg but still failed. Doesn’t hold it’s shape and the colour is very pale. Totally different from yours. No idea what went wrong 😩

作為一個事頭婆子民,今次我有好多嘢講!
1. 如果冇 clotted cream, 我自己絕對唔會食 scone (不過呢邊普通超市已經好易買到 clotted cream)
2. Scone 係食麵粉香味 (所以味道比較單一),如果要有花款嘅話:
3. 傳統上有三種:plain scone (即係條片呢款)、fruit scone (提子乾 only, 唔會用其他生果)、savoury scone (芝士鹹味,用車打芝士)。喺英國唔會有抹茶紅豆朱古力⋯⋯ (諗落已經好恐怖😱)
4. 除咗 clotted cream, 就係士多啤梨或者紅桑苺 raspberry 果醬。(冇呢兩款 jam 嘅選擇我又係寧願唔食,都會有人用橙占嘅)
5. 形狀方面,未必係圓,可以手工 cut 成正方形
6. Scone 加英式奶茶冇得輸!兩樣加埋我哋叫做 cream tea, 又飲又食而比較經濟
7. 傳統下午茶一定係放中間嗰層,多數有 plain/fruit scone 選擇。其實比較高級一定會暖住 serve 俾你,有時仲會用餐巾蓋住,唔想佢凍咗,凍咗會硬又乾

我都無圓形曲奇模,因為係可以用樽口整的哈哈哈。 我通常會用細口水杯or保溫杯嘅樽口,樽口先cup一下面粉,然後再cup落去塊餅皮度。 用樽口仲有個好處, 因為cup完餅皮會樽入面有氣壓迫返舊餅出黎,唔會啜住
牛油係要先在冰格內凍到硬,切成細塊,用指尖搓入麵粉成麵飽屑狀,才加入液體輕拌匀。
其實個clotted cream好易整 你係超市到買鮮奶油 跟著倒落個pan到 開慢火煮 一路攪佢一路煮 煮到咁上下你會發覺佢開始結結地 咁上下啦 你就倒落去一個容器到 擺入雪櫃 雪凍佢 拎返出黎就食得

我試過自己整clotted cream,係用平底鑊極細火煮cream,一路攪一路煮,慢慢煮到杰杰哋就得
Scone最重要的,就是如他所說,不能揉死、揉過度,甚至有餅師專登保留還是白麵粉狀態,總言知就是有強迫症的人,看到不開心的狀態那種散散鬆鬆手感,然後也是盡可能不要壓太大力,那樣焗出來就是鬆軟口感。如果怕肥肥,改用Olive油,會很香味道,當然就少了牛油香了。

1) Darren McGrady 因為其實去左美國搵真銀做 high end catering, 所以而家用既份量係用美式去講既, 配合佢市場丫嘛.
2) Clotted Cream 可能已有人提過, 多口講句其實在部份大間既誠哥 Fusion/Great/Gourmet (百佳 line) 有, 係凍牛油櫃那邊, 一罌罌綠色蓋的, 唔好買錯同牌子藍色蓋的 double cream. 有時在 Marks & Spencer 擺 Chilled sauces那邊都有不過大包裝. 當然, 呢D都係撞手神, 近兩星期我去睇過香港島幾間 Fusion 都唔見. (之前在金鐘/太古) 見過

the water from the cream is called butter milk, that can be used for making yohurt
Quick tip, do not twist the cutter when you cut them to get a straighter upward rise. Cut, then lift straight up, don't twist.
