The easiest way to make the house smaller is to shorten the bottom of the house by 1-2 link balloons. You could also remove 1-2 strings off the sides of the house depending on the dimensions you are trying to achieve.

my ceiling is 8ft, is there a way to shorten the house without it looking odd? Where should I leave the links out??

You can shorten the strings by 1 or 2 link balloons across the bottom of the house and that should shorten it enough. Just don't shorten the strings above the doorway.
