Chill the dough before scoring and the scoring itself will be so much cleaner.
"Don't score on the side" proceeds to score along the side in the very first scoring example shown in the clip
We're sorry if these instructions were unclear! It's best to avoid scoring *only* along the side, as that will not allow the loaf to open properly along the seam while baking, which will result in un even crumb and possibly a denser loaf. Many bakers choose to make many slashes on the surface of the dough for a decorative effect- feel free to score along with edges in these cases, as long as the center/top of the loaf is also scored. This will allow the dough to "spring" upward and outward in the oven for the most even loaf. Happy baking! -👩🍳Tess
