    Ingredients
    For the alfajores' tops:
    200 grams of butter at room temperature
    150 grams of sugar
    2 egg yolks
    1 whole egg
    1 teaspoon of vanilla essence
    300 grams of wheat flour
    150 grams of cornstarch
    1 teaspoon of baking powder
    1 pinch of salt
    For the filling and topping:
    400 grams of dulce de leche (recommended for its consistency)
    100 grams of shredded coconut
    Instructions
    Preparation of the tops
    In a large bowl, beat the butter with the sugar until you obtain a creamy, whitish mixture. This process can take about 5 minutes with an electric mixer.
    Add the egg yolks, the whole egg and the vanilla essence to the butter and sugar mixture. Beat until the ingredients are well incorporated.
    In another bowl, sift the flour, cornstarch, baking powder and salt. This will help prevent lumps and make the dough smoother.
    Add the dry ingredients to the wet mixture in several additions, gently mixing with a spatula or your hands until it forms a homogeneous dough. Avoid overworking the dough to prevent gluten development and keep the alfajores tender.
    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up slightly and be easier to handle.
    Shaping and Baking the Tapas
    Preheat the oven to 180°C (350°F) and prepare a baking sheet by covering it with parchment paper.
    Remove the dough from the refrigerator and roll it out on a lightly floured surface until it is about 5 millimeters thick.
    Cut out circles about 5 centimeters in diameter using a cookie cutter or small glass. Place the circles on the tray, leaving a small space between them.
    Bake the tapas for 10-12 minutes or until they are just golden brown around the edges. Remove from the oven and let cool completely on a wire rack.
    Filling and Decoration
    Once the lids are cool, take one lid and spread a generous amount of dulce de leche in the center. Cover with another lid, pressing gently so that the dulce de leche spreads to the edges.
    Roll the edges of the filled alfajor in shredded coconut so that it adheres to the dulce de leche. Repeat this process with all the remaining lids.
    Final Tips
    Coconut alfajores can be stored in an airtight container at room temperature for several days. Their flavor and texture even improve over time, as the lids become slightly moistened with dulce de leche.
