I'm sure some fellow brewer/moonshiner has pointed this out already, but to clear your cider or whatever you're making, you have to rack it. After it's fermented or even slightly before you reach the desired alcohol level, you have to let your sediment settle. Then transfer the clear liquid to another container by pouring or syphon. You keep doing that until you have a clear product with no sediment. Also the racking process tends to make for a cleaner tasting and high quality product.
Mine is ready in 2 weeks... 8 days in the fermenter and a week or more in the bottle for secondary fermentation. The Keg is carbonated in 3 days. Easy.
Did you degas the cider during the fermentation? Add anything like raisins to the cider for nutrients for the yeast? Did you rack the cider after fermentation to a new container to allow it to clear? I'm just curious because I'm interested in this, I've started making Mead that will take about 1 month to 2 months and these were things I've found out from other brewers that seem to make their drink better.

i brew a basic stock like your's but when its done i freeze it the alcohol comes out within 15 minutes then i freeze it again to further concentrate it it will knock you on you'r but
normally for HARD CIDER you don't add anything but apple juice or cider (non pasteurized and non preservative added is best), water, sugar if you want it sweeter, yeast. Its MEAD that you use water, honey, yeast, and fruit if you want it fruit flavored. MEAD is the oldest fermented drink. I would also say non plastic container for making higher alcohol content beverages is what you should use.
Which Red Star yeast was that? I'm testing different yeasts and sugars, including extra apple juice concentrate. I haven't tried honey. HOBBITS LOVE CIDER!
Im going to use Camden tablets for sterilization and was wondering if the residue from the tablets effects the yeast Should the bottle be rinsed after cleaning with the Camden tablets?
as a stoper for the top of the glass bottle to let co2 out just put a balloon over it and if it gets too big and you fear it popping simply let a bit out this will allow flexibilty and a constant co2 cap with a bit of pressure to carbonate the cider a bit

We made cider by exactly the same method. However, we discovered, by complete accident, that Safbrew T-58 ale yeast makes the best cider (and we use a small amount of priming sugar).....
Bigus Dickus i agree that ale yeast works great vs dry wine yeast, especially if you want sparkling cider. i use the nottighams bc its readily available in my local brew shop

Richard Peterson natural juice is harder to clear up naturally. most peopke who use whole fruit add peotic enzyme before fermenting, this will remove the haze of whole fruit. But keep in mind haze in a whole fruit wine does not mean a bad wine. i have made a prickly pair wine with whole fruit.and it was hazy, bc i made a large batch, i was able to age a few. the ones that were over year old cleared in the bottle. So if you want nice clear wine using whole fruit and not adding enzymes, then you need to let it age a year or a bit longer
Hello dear, I live in Afghanistan. As access to wine yeast is very difficult so I planned to make my first home wine to use the bread yeast. I used 11g bread yeast (Saccharomyces cerevisiae) in 4 litter natural juice after activating it. The initial gravity was 1.11(1.04 was before mixing sugar and this is also target). But surprising when after 25 hours I took the gravity, it showed 1.07. Could you please update if this is normal. If yes then when the target gravity achieves 1.04, how should I make the yeast dormant/killed?
Let the yeast run it's full cycle. The closer to 1.0 the less sugars left and more alcohol created. You can stop it early to save some sweetness or you can back sweeten it.
I've been making hard apple cider for a few months now, have made several batches. My experience has been it take a month and possibly a little longer for the fermentation process to be over. If you stop the fermentation process earlier, your drink will be sweeter with lower alcohol, if you let it go longer, the alcohol will be higher and of course less sweet. You can use gelatin to clarify the brew once you've finished the brewing process. (there are other TH-cam videos about brewing hard cider and using gelatin to clarify the drink.) I haven't used honey yet, but I may in the next batch I make. Thanks for the idea.

I'm sorry... did you say it takes 2 weeks for the fermentation to occur? LOL, I've brewed many a beer, cider, and mead. Fermentation begins the same day. Within a couple of hours you should have bubbles in your airlock. If there is gas being produced, then fermentation is occurring. Now fermentation usually stops at around 2-3 weeks... I'm brewing two 1 gallon batches of cider right now.
I find natural yeast works fine for small batches. Add about 6 or 8 whole grapes to a half-gallon of apple juice and about 1 cup of sugar. It will start fermenting in a day, and it's ready to drink in a week. There is no need to filter, as yeast is actually good for you! It will be bubbly, and not as strong as the average beer, but very good tasting (especially over ice!)
Filtering out the yeast is important if you're bottling and capping it as having yeast in the airtight bottle can lead to explosions as it's still fermenting and creating gas that wouldn't be able to escape

Seems delicious. I'll be trying it. But FYI, Super Yeast X-Press by Liqour Quik produces 12% alcohol in 24 hours. I'ts high quality brewer's super yeast that contains all the nutrients necessary for the yeast to thrive.

Pasteurized is fine especially if you are wanting to not use Sulfites to control wild yeast! You do want to avoid preservatives like Potassium Sorbate, as they will prevent fermentation of your Cider! Did you take a Hydrometer reading? If so what was your starting Specific Gravity for your Must? If not you should invest in a Hydrometer as that is the only way to determine the amount of alcohol you have produced, as well as telling if you fermentation is complete or if it is stuck and needs help to continue! What kind of yeast did you use? The image was not clear enough to read the package other than the brand. Depending on the yeast it will not ferment all of the sugars as it will only be able to survive to a certain level of alcohol, others will go much higher and almost every strain will give different flavor profiles! So if you were happy with the result you got knowing the variety will help others to get similar results. What kind of honey did you add? That as well will effect the final flavor. On your bucket lid you need to cut the tabs at the spots around the edge so you can get the lid on and off easier there is no reason to fight it like that you will end up hurting yourself or spilling your Brew a tragedy to be sure in either case!!! Fun video keep them coming :)

[Complete novice here] What's the purpose of warming up the apple juice (1:40)? It that what activates the yeast to consume the sugars in the juice I guess? Are Americans still using degrees fahrenheit? I had to look it up on google to figure out what those numbers mean lol :)

Note: if you do the 1 gallon store bought you have to make sure it has NO preservatives or sorbates or the yeast will die and not ferment.

Dan Waller technically they have made a mead. This is more properly called a cyser.
you also do not want to boil the cider when starting the yeast or you will create pectin. pectin is no Bueno in making alcohol.

If you cut some slits on the lid it will be much easier to work. The instructions are molded into the top of the lid. Makes it way easy.

be very careful when you filter as it oxygenates the brew and can cause oxidation if done improperly and stored for too long before use

I've tried honey and it was bad. I think the yeasties want simple and not complex sugars.
Try adding some raisins, about a handful per gallon for yeast nutrients.
