Onions and butter salt and pepper and you can’t beat heart. When I was younger and couldn’t sit all day, I would pay attention to where the shots were in the morning and try to find the gut pile to see if the heart was there. Could usually find a couple, good eating.
I have always ate deer liver and heart,that was my supper the day of harvest. I slice both thin and flour and seasoned with garlic powder salt and pepper. Melt butter and fry for a couple minutes per side and it’s ready. I fed deer liver to people that don’t eat liver and they said it was great. I sometimes put the liver in onions also.
I never coated mine. Would just slice thin long ways and some onion and garlic and fried in a little olive oil or bacon grease with eggs and toast morning after and being soaked in some white vinegar water over night
There's people ice fishing in the river channel in Caseville. Absolutely insane to be out there this soon imo. Another good use for hearts/liver/organ meat is in sausage. Blitz it up into a paste and use it in fine ground sausages like hotdogs or summer sausage at ~10%. Adds a lot of flavor and richness with no texture issues.

Venison heart is my favorite part of the deer. I do stew,and fried like that. This year i ground it up and made breakfast sauage with it.
