Yay, I love Samin. Her energy is so warm and fun. It's always fun to mix things up now and then. That's why I'm making a chai apple pie and putting chinese five spice in my pumpkin pie.
Let's face it, the Anglo-American Thanksgiving canon needs a lot of help, and these condiments are such a refreshing and inventive departure from the norm. I love how Samin gets you thinking about flavor palettes and texture contrasts in a way that really inspires and gives you the framework and confidence to build delicious dishes on your own. I'm for sure gonna make the salsa verde this year, though I'm tempted to make all three cuz they look so damn good.
My family is Chinese and let me tell you it always has been the best Thanksgiving dinner I've had!! We are so particular about the texture/juiciness of the turkey and I think that comes from our chicken dishes like for example Hainese chicken. Over cooking poultry literally is the worst. Our sauces are tasty and salted to a t! We even make our stuffing out of rice and put soya sauce in it. Makes me really proud to include bits and bobs of my ethnicity's food combine it with my home country and make a killer meal out of it!

They're so married to the idea of having a Norman-Rockwell-esque whole bird coming out of the oven that they're willing to eat something of inferior quality in every other way. I love the idea of rice stuffing! Andrea Nguyen shared a recipe on the Splendid Table with glutinous rice, chestnuts, cilantro, and some of the turkey liver, which sounds divine!

SAMIN!!! THE FRIED SAGE SALSA VERDE WAS EPIC!!! We made it this year with butt-tons of sage from my parents garden. We're making it again for xmas but at least three times as much. I keep starting sentences with "I wish there was more salsa verde!" complete game changer!!!
I made all of these recipes and OMG they were spectacular. The chutney was good at dinner but GREAT on the sandwiches. I also made the buttermilk turkey and it was a huge hit and a 20lb bird cooked in two hours and was juicy and yummy. I am so very glad to have these recipes all year around. Samin, you are my favorite!

Man! The idea that we lean so heavily on Cranberry sauce at Thanksgiving because it's the only tangy part of the meal is a REVELATION! So true. Definitely adding these condiments to my repertoire.
I was definitely lucky to grow up with amazing Thanksgiving dinners that friends always made sure to make it to in the evening (we eat quite late) for their “second Thanksgiving” as our house arguably had the best meal. 😂 Yet I am very excited to test some of these and bring them to the table this year. Your perspective to very traditional American Thanksgiving foods resonate with me. I’ve never been a big fan of traditional Thanksgiving foods. I’ll eat them, but dread leftovers. I agree with Samin - too mushy, too similar in consistency, bland, not enough contrast. Thank you for these refreshing condiments to boost Thanksgiving foods.
Samin! So, so good. Thank you! I've been practicing this with the herbs, shallots, cubed bread then after seasoning and mixing all, I fry my chili peppers in that oil. It's all delicious but better still, that oil is like pure G.O.L.D. Basting a chicken with that or it as a pesto or salsa base is amazing.

I think frying the scallions and then herbs and then bread might be better no? Bc the bread then absorbs that oil thats been infused with both herb and scallion

I have herby fried shallots in my fridge AT ALL TIMES NOW. She's right though - those shallots keep browning for a while, so take them out while they're still kinda beige.
